Fantôme’s winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can’t so for sure what this year’s beer will be like, but it is sure to please lovers of Dany’s beers.

Aroma is heavy and sweet with some citrus, funky yeastiness, apricot and fruit candy. Flavour has citrus juice, some apricot and spicy tones. Also some alcohol. Fantôme touch is present here. The citrus notes are too tart for me.

75cl Bottle, I guess 2013 version. Hazy orange colour, white head. Aroma is sour, acidic, light floral, yeast, light fruity. Flavour is sour, acid, tiny hint of spice, malts, yeast, floral, citrus, bitter finish. Sour lingers a bit. Light to medium-bodied. It’s refreshing in a way, but I didn’t really dig the sourness, too sharp.

The beer is a deep shade of gold. Smallish white head. It’s fairly hazy, though I guess I didn’t keep the bottle settled as well as I possibly could have. The aroma is fruit and spice on top of a rich saison base. There’s apricots and raisins with orange zest, pepper and mint. Mild caramel. Cinnamon. A healthy dose of Fantome funk. Some banana. A little bit of green apple. It’s a fun mix. Taste starts out with fruity sweetness, mostly orange and banana. Pepper and cinnamon lend a little sharp kick. Fairly dry, kinda sweet woodsy finish. Full mouthfeel. Not too much carbonation. It’s a rich saison that actually seems to fit the winter season.

Aroma: Malt, fruit, some spices, yeast, hint of caramel.
Body: Medium body and carbonation.
Flavour: Malt, fruit, yeast, spices, citrus.

750 ml bottle @ Kick. Hazy orange body with a creamy off-white head. Nice farmhouse aroma, light funky with spicy yeast and oranges. Flavor is sweet malt, slightly acidic, citric fruit, oranges zest, pepper and spicy with moderate bitterness. Medium body and decent aftertaste. Quite rustic, not exactly what I will call elegant but enjoyable on its own premises.

The winter saison in this series, changing recipe each year so should be rated per vintage here; the vintage I tasted, had almonds added to it. Cloudy brownish amber colour, cream white head, complex yeasty and spicy aroma with caramel malts, almonds only faintly noticeable, fruity as usual for a Fantôme; bready and honeyish malts in the mouth with complex spicy accents and fresh fruitiness, faint chocolate note, sourish accent as usual. Very well-balanced and I urgently have to taste this anew.

Thank God, this looks like the last fantome.
This was poured into a snifter and a tulip.
There was a light glossy orange color with some bronzed over brownish sort of color. There was barely any head and lacing.
The smell had a leathery funky and overly sour.
The taste was putrid as I thought I was tasting shoe leather from the late 1800’s.
The palate was super dry as it seemed to have sucked my mouth dry and wounded my taste buds to have this beer to be somewhat enjoyable.
Overall, I’m so glad to be done with fantome as I will never try any of their beers ever again.

Bottle @ Fermentoren, Århus. Pours golden / orange with a offwhite head. Aroma of malt, loads of yeast, bread, grass, hay, flowers, light spice. Flavor of malt, yeast, hay, grassy hops, spice, lemongrass, sweet flowery hops. Medium body, soft carbonation, light bitter finish. 120614

Bottle. 8%. Hazy amber with small off-white head. Aroma is malt,fruit, yeast, spices,hat and grass. Flavour is malt, yeast, grass, spices, medium sweet, hop, strong spices, hay and medium bitter.
