Schmetterling Gose is a modern interpretation of an ancient top fermented saline sour ale native to Saxony. Local Option Bierwerker took the task of reviving this unique style that disappeared during the early part of the 20th century. True to its antecedent, Schmetterling Gose is brewed with equal parts malted wheat and barley; seasoned with black lava salt, coriander, and hops; and fermented with yeast and lactobacillus. Light bodied, highly carbonated, pale in color, with a subtle aroma of spice and citrus and a dry, crisp, refreshing finish, Schmetterling Gose is ideal in summer months but appreciable year round.

Draught from The Cannibal. Yellow to dark yellow pour. Spicy, tart, a bit more subdued and watery than Leipziger Gose which is my only real comparison point.

Keg at Cask Pub & Kitchen. It pours clear gold with a medium white head. The nose is sweet lemon, biscuit, wheat, grain, herb and barnyard. The taste is biscuit, cheesecake, herbal, lemon peel, dough and just a touch of sourness with a dry finish. Light-medium body and fine carbonation. Not sour enough for a man like myself and bit too much cheesecake.

Draught @ Orsted Olbar, Norre Farimagsgade 13, 1364 Copenhagen, Denmark. [ As Against the Grain Local Option Gose ].ABV: 4.5%. Unclear light to medium yellow colour with a small to average, frothy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, pale malt, moderate yeasty, cheese, spicy - coriander, sour notes. Flavour is moderate sweet and light to moderate bitter with a average duration, sweet fruity, mint, light salty. Body is medium, texture is watery to oily, carbonation is soft. [20130914]

Draft @ Local Option, Chicago, IL. Pours a hazy yellow color with a white head. Has a fruity spicy yeasty sour salty aroma. Fruity spicy yeasty and slightly tart flavor with weak salty hints. Has a fruity slightly sour tart salty finish.

Tap at Local Option, Chicago. Poured a hazy light amber with a frothy white head. The aroma is dry crisp yeast and citrus fruit. The flavour is medium sour with a big grapefruit citrus yeast palate and a smooth apple like finish.

The Sampler, Brooklyn tap: Pours hazy, dirty yellow with a white head. Aroma is lemon, a bit of sourness, and a tad of the funk. Taste is slightly sour and a wee bit salty as would be expected. Small amount of funk that is just about right. This is a simple gose, but a good one.

Draft at Beer Temple. Pours clear golden with a white head. Aroma of citrus, coriander, light fruits. Flavour is light to moderate sweet and bitter and salty. Light to medium bodied with light carbonation.

(Draught at Söernes Ölbar, Copenhagen, 12 July 2013) Golden colour with frothy, white head. Fruity, sourish nose with notes of citrus, lemon peel, coriander and white bread. Fruity, slightly tart taste with citrus, bread, gooseberries, grass, coriander and a touch of salt emerging on the lips after a while. Medium body, with a touch of sweetness and hardly any bitterness. Different, but quite enjoyable.
