Dit spontaan gefermenteerd bier werd gedurende 5 jaar afgerijpt op enkele van de beste rode wijnvaten uit de Bordeauxstreek in Frankrijk.
Met als resultaat een fruitig en zuur bier waarbij de smaak van de houten vaten en rode wijn herkenbaar zijn.
De afdronk is eerder droog.

Opgelet: Dit bier is voor de gevorderde liefhebber van zure bieren.

Aus der Flasche (bottled 13.06.2024/bbe 13.06.2034) im 2025-06 getrunken. Bei diesem rote Ale mit kräftigen Kirsch-Aromen und auch Säure zeigt sich auch die lange Reifung im Rotweinfass. Sehr klassisch und lecker!

18 February 2025. Bottle from Hopduvel. Vintage 2018. Bottled: 10/07/2024.

Clear dark golden to orange, lasting, thin, white head. Aroma of vinegar, dry sherry, horseblanket, wet hay, damp cellar, green apple, sourdough, sweaty cheese, grape must. Taste has sour unripe plum, nectarine pit and white grape in a sourdough- & sour cream-like malt body; complemented by lactic acid, funky hay, vinegar and wet wood notes. Tart, dry, astringent finish with a dash of old grassy hops, impressions of oak, grape skin and stone fruit pit going hand in hand to provide a tannic and sherry-like finish (without noticeable alcohol warmth). Medium body, slick-moussy texture, soft to flat carbonation. Complex and rounded Wild Ale, a far cry from Struise's latest boozy endeavours, but clear testimony to their inherent craft.

Bottle. Nose is balsamic, sour, lots of funk, pastry, but balanced by a vanilla, cream sweetness, red berry, a hint of port, and red wine. An outstanding nose.

Taste is tart, green apple, oak, an emergent funk, lots of red wine notes giving it real depth. Struise seem particularly adept at aging in redwine barrels, I always love their beers aged in this way.

330mL bottle, pours a hazy orange with a tiny white head. Nose is full of red wine barrels, acetic notes, and all sorts of wild critters. Flavour is surprisingly soft and not acetic, with plenty of deep but subtle wine barrels, gentle bugs, and some light-to-moderate tannins. Refined and nicely aged. It’s short of excellent but it is very good.

Poured from 330mL bottle (2018 vintage; bb 10/07/24 +10yrs). Hazy gold with minimal white head. Nose is fairly acidic vinegar with some feint wine notes. Taste is much softer acidity with some vinous notes and slightly creamy texture.

From a (very) old rating dating back to 2005: Struise’s attempt at a cherry ’lambic’ with spontaneous fermentation to which cultivated yeast was later added (making it a sour ale of mixed fermentation), macerated with cherries and matured on oak. Quickly dissolving, off-white foam, colour a coppery brownish red, murky. Aroma strongly dominated by real cherries, like a ’real’ cherry lambic but less funky and more ’clean’, old sherry accent clearly noticeable, some caramel, walnuts, wine vinegar; extremely fruity taste of genuine sour cherries, almost overwhelming, lambic-like acidity, complex, hay, woodiness, long finish, sourish and reminiscent of a very dry sherry. For a random attempt at getting as close to the real thing from the Zenne valley, the Struise Brouwers did a great job - whether by coincidence or not.

Lichtbruin bier zonder schuim. Smaak is fruitig licht zuur met iets van druiven, wat rode wijn en kersen. Deze kan me wel bekoren.

Bottle, vintage 2018, bottled 10 jul 2024. Aged for 5 years on Bordeaux red wine barrels, according to the label. Color: Slightly hazy reddish golden, almost no head. Aroma: Vinuous, red wine, lime. Taste: Sour, vinuous, red wine and wine vinegar, lime and lime zest. Malty. Rural wild yeast funk. Red fruit. Medium body, low carbonation. Over moderate to medium tart. Nice one, but no winner for me.
