Dit spontaan gefermenteerd bier werd gedurende 5 jaar afgerijpt op enkele van de beste rode wijnvaten uit de Bordeauxstreek in Frankrijk.
Met als resultaat een fruitig en zuur bier waarbij de smaak van de houten vaten en rode wijn herkenbaar zijn.
De afdronk is eerder droog.

Vintage 1983(!) on tap at Copenhagen Beer Celebration 2012. Hazy brown colour. Moderate brettanomyces / farmhouse aroma and flavour, somewhat oxidised but still drinkable, medium sour and oaky.

On tap at CBC 2012. (vintage 1983) Slightly hazy reddish brownish with a small head. Interesting aroma of berries, red wine, wood, dust and some notes of funk. The taste was still surprisingly fresh and complex. Very smooth mouth feel. Not much carbonation but very drinkable. What an honor to finally got to try this beer.

Sample @ Copenhagen Beer Celebration. Pours hazy brownish red with a creamy pinkish offwhite head that slowly dissipates while leaving some lacing on the glass. Smell is sweet and sour with sour cherries, hay, barnyard, apples, vinegar, lemon juice, orange juice and dry soil. Taste is sour and malty with dark bread, sour cherries, hay, cherry pits, lemon juice, brett, funk, barnyard and lemon zest. Mouthfeel is round, tiny crisp, tart and medium bodied. Finish is tart and sour with dark grapes, sour cherries, cherries, lemon zest, dry soil and barnyard. Balanced, elegant and really really good!

1983 Sample @ Cbc. Pours red/brown/orange. The aroma is indeed dirty :-) Notes of vinegar, wine, chocolate... and canada goose pooh :-) Taste has got notes of cherries, strawberries and chocolate. Surprisingly mild and sweet. Low carbonation. Drinkable yet complex.

Aroma is sourish and somewhat sweet with redcurrants and earthy notes. Flavour is really sour and slightly tart with redcurrants, earthy notes and hints of spices. Dry finish, this stuff really dries your mouth. Very close to a homemade juice made of redcurrants. Does not feel like a 30-year old beer, maybe just a hint of moldy cellar at the finish.

Vintage 1983 Pours dark reddish with a nice smooth white head. Aroma of ripe, slightly tart fruits, malts, berries and currant. Taste of slightly tart fruits, a lot of berries, some currant and caramel malts. Finish is dry, slightly sweet and malty with some sourish berries. Tasty, quite easy to drink, not very sour.

Bottle 99/100. 100% from 1983. Big thanks to Trey and Dan for bringing this gem to the Philly tasting. Cloudy burnt orange pour. Caramel with hints of honey on the nose. Orange, supple honey, with hints of cherry and apple. The body is light and there is all kinds of caramel malts here. Considering this beer is 29 years old, it is FANTASTIC....

Taste: fruity, apple skin, wood, red currants, touch of wild honey, aroma tobacco (non burned), peppery. Aftertaste: lemon, apple skin, more wood tones. Why the maximum score? Because it's impossible to give a beer with this much love a score, because it's incomparable with anything else, because this is a beer that can't be trapped in numbers. Anything less would be an insult to the 28 year old beer.

[3/4/11] Draught at ACBF 2011. Deep reddish brown with a pinkish beige head. Aroma of brett, cherries, oak and some leathery notes. Sour-sweet flavor with oak, cherries and some malt. Medium-bodied. Lovely.
