Tired of talking my friends into pit stops at beer bars before heading “out” — in fear of having to drink bland lager all night — I set out to craft an ale that would act as companion throughout the evening. Levon is assertively hopped and fermented dry using champagne yeast. The yeast and the hops in combination with a simple malt bill provides the beer with a quality of being rich in taste yet refreshing.

A regular beer, an interesting beverage with American and Belgian influence, rather dry, grainy and malty, a bit burnt, fruity, a bit tart, final of dry hop, 21.03.2, at Epalinges, from the coop city, Bern.

Bottle to tulip.
Appearance: pale yellow in color with a two finger white foamy head which dissipated slowly to leave some light lace
Aroma: sweet grains, subtle freshly cut grass, light notes of some yeast and some biscuity malts
Flavor: blends all the prior noted aromas together semi-sweet with a touch of funky character; mild finish of the grass, grains and the yeast
Texture: light bodied, sessionable, some carbonation seems to cling to the tongue
Overall: not a bad beer but nothing to really go out of my way for, not sure if it's because I'm not into champagne. However, I bet this beer might go well with it's respected food.

Keg had this at Mikkeller, Berlin, Friday 23rd January 2026. Pours light hazy mid gold, very light haze. Doesn't taste 6.5%, there's a little zippiness but Belgian influences are few and far between. Soft mouthfeel, light bitterness, it's ok. Score 6.3

Bottle at home from de Caigny. Pours semi clear golden with a forever lasting white head. It's surprisingly safe play in every aspect, some hoppyness, sure, some yeast character, sure, but it doesnt really deliver - and I dont mean as an Omnipollo beer, I mean as a Belgian pale

Rerate from tap ay Omnipollos Kyrka. Seems different from my old rating: hazy golden, white lace. Light citric flowery nose. Spritzy dry body, fresh, no chalkiness, medium body, mellow, light fizz. Spritzy fruity, very drinkable. Quite sessionable.

Bottle at home. Aroma is pale malt, zesty citrus, lemon, spicy yeast, strong hoppy notes. Flavour is moderate to medium bitter. Body is medium, has a fairly dry finish. Nicely hoppy and fruity Belgian style ale.

Golden colour, small head, pretty lacing. Aroma is very funky, also tonic, juniper, flowers. Light bitterness. Lively carbonation.
