Well cellared bottle. Pours beautiful clear delicate pink, small fizzy white head, dissipates quickly, not much residual. Aroma has a nice plum nose, lemon, hints of wood, cherry. Flavor is light tart, fruity, hint of salt, delicate. Light body, soft carbonation. This is truly excellent.

Poured from a 750 ml bottle with a 5.6% abv that was from the first batch, club release. Aroma is nice with some light citrus and wheat notes as well as evidence of the acidity. Medium light plum notes with hints of oak. More plum and some tropical fruit as it warms. Pours a fairly clear, pale yellow gold with some red hues and a medium large, thin, white head that recedes quickly to the edges and disappears. No lacing or legs. Flavor is moderately acidic, but has a nice complexity to it with some white wine and oak notes as well as tropical fruit and citrus. Nice pineapple and lemon notes. Medium light plum and a light mustiness. Hints of wheat. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, the plum character isn’t super prevalent and obvious, but this is a very nice, complex Bu. I remember when this came out there were reports of ropey Pedio so I held onto this, and I am very glad I did. This has more funk and a more complex acidity than any other Bu that I can think of off the top of my head. The age has sacrificed some of the fruit character though.

Bottle. Pours a cloudy pink with small white head that lasts. The aroma is strong funk, oak, plum skin, dough. Thin mouth, plum skin, oak, funk, nice tartness, held up very well, really enjoyed this.

Bottle at Nick’s tasting. Pours pink grapefruit with no head. Nose/taste of plum, sour lemon, funky wheat, oak and sour fruits. Soft carbonation. Lighter medium body.
