Sitting on a deck over water and eating fresh seafood is a special privilege of being from the Jersey Shore. Doing exactly that one sunny day, The Wit Whale occurred to us. Having grown up alongside schnitzel, we knew that the esters of classic wit yeast would associate well with the crunch of fisherman’s platters, while a drinkable malt bill of 50% wheat and 50% pilsner would accompany the sweetness of the fish themselves. We relied on the mineral profile of our water, dressed-up with lemony Sorachi Ace and grassy Summer hops to play with the richness of shellfish. Drink The Wit Whale because you have a basket of fish in front of you, and you can see the water where it was caught.

Five Boro Craft Beer Fest: pours somewhat hazy with a white head. Aroma is spicy and tangy. Taste is super spicy and tangy. Nice fruity finish.

16 ounce can. Large bubbly white head. Lemony wheat malt nose. Crisp, dry, minerally wheat malt flavor upfront. Hints of lemon peel and light cloves. Hops come through in midtaste and finish. Pronounced peppery notes. Imagine this would be a nice compliment to some fish & chips or soft shell crabs. Umm!

Can - pours gold white head - nose and taste of banana, citrus, lemon and clove with wheat malt - medium body

Location: Draft at the brewery, 7/19/14

Aroma: The aroma is lemon, wheat, a little spice, and some grass notes as well
Appearance: It pours a golden color with a thick white head and some decent lace
Flavor: The taste is much the same, some wheat/malt sweetness, spice, and a mid-bitterness
Palate: The body is light-medium, it has a fairly clean finish on the mouth
Overall Impression: Overall, I thought this was a pretty nice beer. The hop profile works here to balance out the sweetness and create a more balanced beer than one might expect.

Tap at Stagshead Carton night. Nose of citrus and wheat. light bodied but higher abv than i would have guessed. Tastes yeasty, quite lemony, grassy, some coriander as well perhaps.

From tap at the brewery. Pours hazy yellow with a small white head. Aroma is dry estery, coriander. Bitter, dry, estery and light spiced. Dry and light herbal into a mellow finish.
