Taste is tart, funky, spicy, slightly woody, fruity, minimally floral and grassy, notes of peach and apricot, white and black pepper, white grapes, some oak, a touch of floral honey, brine, mustard seed, dill, nutmeg, chamomile, lactic acid, old lemon peel. Minimally oily, watery texture, minimally astrigent palate, prickly carbonation. Very complex, well balanced, a plethora of flavours - fantastic!
