Our take on what IPA once was, using a coolship full of hops co-fermented with native yeast in an open foudre.

Components: Batch #28, brewed 10/11/18: Foudre-fermented “AntIPA”

Total Volume Packaged: 1917 L / 507.14 gal; 18 20-liter kegs; 9 30-liter kegs; 1716 750ml bottles

Grains: Copeland Dark Malt, Copeland Dark 80 Malt, Raw Red Wheat, Acidulated Malt. All purchased from Skagit Valley Malting.

Hops: Pacific Northwest Simcoe Cryo from YCH, Pacific Northwest Whole Flower Santian, Whole Flower Sterling, and Whole Flower Cascade from Indie Hops.

Other Ingredients: Municipal Water from the Judy Reservoir; Blackberry Honey from The Valley’s Buzz (for bottle/keg conditioning); our house culture of native Skagit Valley yeast.

Tap @MBCC 2022, Blue Session. clear dark golden, white head. Earthy elderflower aroma. Similar flavour, sweet malt.

Tap. Clear deep golden-orange color with white head. Aroma is fizzycandy, grassy hops, elderflowers, peach, and some yoghurt. Taste is the same, pretty funked up. Fizzy carbonation. Interesting!

MBCC. Clear amber with a white head. Aroma is sweet, malty, elderflowers and light tart. Flavor is quite sweet and light acidic. Dry and light acidic finish. 130522

On tap at Garden Path, pours a cloudy amber orange with a small white head. Aroma brings out subdued earthy hops, with gentle wild yeast and a little oak. Flavour is along the same lines, with oak, a nice wild yeast base, and bitter earthy hops. Wild and bitter finish. Not the most complex, but it works.

Amber, quite cloudy, with a fairly thick head. Bretty and hoppy. Yeasty, woody, little bit buggy. The malts are a bit husky and messy but hey.
