Loosely inspired by a Belgian-style Flanders Red ale, this beer is an exercise in balancing fruit and acid with some more complex malt character. We aged our red sour base in wine barrels with bing cherries from Hood River for about a year before transferring into freshly emptied Maestro barrels (former bourbon). The American oak adds a distinct vanilla note and there’s a hint of malt sweetness from the barleywine that helps round out the beer.

One of our most complex beers - malt is usually back seat to the fruit in our blonde sour beers, but in this case it’s a prevalent part of the flavor profile. The quick (2 months) rest in bourbon barrels really smoothed out some of the sharper acid flavors to make a well rounded and balanced beer.

Barrels: Wine and bourbon
Microbes: Saccharomyces, Brettanomyces, Lactobacillus

Nice tart and sweet cherry pie funk. Lots of barrel to round out the finish.

Bottle share thanks to Toby. Pours an amber color with a ruby tint, moderate beige cap. The aroma is earthy and vinous, small amount of cherries. The taste is a lot of the barrel treatment, more vinous notes, sour pie cherries, and farmhouse funk. Woody and a bit of vinegar.

Dark reddish-brown, this has a deep fruity, woody nose, tart and woody palate with cherry and vinousness. Nice, well balanced take on a Flemish red.

On tap at Apex, pours a deep dark mahogany with a small beige head. Aroma brings out light cherry skins and a touch of wild brett. Flavour is along the same lines, with wild funky yeast and dark dried fruits. Complex and deep, with a rather viscous palate for the style. Very good.
