Sour-Barrel-Aged Strong Ale

Boxer’s Revenge is a simple beer at heart. It’s a high gravity wort composed of malted barley, a little raw wheat, and just enough hops for balance. After primary fermentation in stainless steel with our mixed culture, we sent it to oak barrels for long term aging. Our latest batch spent 25 months in oak prior to blending and packaging. Our high gravity barrel-aged beers see extended time in oak to allow the flavors to mellow and integrate.

Fun fact — Boxer’s Revenge is the first beer we ever brewed in September of 2010. We released other beers before it since it’s barrel aged, but it was our first brew.

Another fun fact — the label art for Boxer’s Revenge was inspired by George Orwell’s Animal Farm. We like to pretend that Boxer the Horse escaped to open a brewery!

From bottle @ Borefts 2012. Citrus and pepper in the aroma. Sweet lime flavor with vinous and peppery notes. Sharp and acidic.

Clear orange beer, creamy dense white head, stable, adhesive, leaving a nice lacing in the glass. Aroma: nice, very fruity, little funky, peaches and apricots, some tannins, vinegar touch. MF: ok carbon, medium body. Taste: lovely balance between sweet and sour, very acidic, lemon juice, balanced by a nice fruity kind of sweetness, lots of peaches, nectarines, some lychee, lemon juice. Aftertaste: bit dry, some tannins maybe, bitter touch, nectarine skins, pretty dry finish, some tannins. All right, a sour Jester King I like, that's nice!

Keg at Hop Locker 3. Funky fruit aroma. Hazy opaque bright amber. Thin creamy white head. Medium sour. Solidly fruity and marmalade. Medium bodied. Slick. Average-fizzy carbonation. Long dry and not overly astringent finish. Good stuff.

On keg at the Hanging Bat. Appearance - damson with a light haze. Nicely proportioned head. Nose - tangy apple vinegar. Plenty of wood. Taste - soggy wood with sour vinegar notes. Palate - medium bodied but lean and tight in body and there's a long, long finish. Overall - good, but not sure of the balance.

Bottled 750ml. -from Pivoteka Zagreb. Unclear orange coloured, medium sized white head, tart, slight citric and woody nose. Sweetish yeasty, citrusy, fruity and tartish with light notes of wood in the finish. Enjoyable and well done.

Taste: Complex combination of citrus and tropical fruity notes, moderate to medium sour, subtle spicy and floral notes, funky yeast and earthy and wood hints.
