Most definitely, this first and foremost a wheat ale. You can taste the wheat from start to finish. A faint toasted note from the addition of flaked oats is present in the beer as well. This is a light bodied beer that finishes with a spicy layer in the end. The overall impression should be an easy-to-drink refreshing ale.

quite a nice interpretation of a belgian white. good aroma and color, they didnt try to reinvent the wheel with the flavor, the typical unfiltered wheat and yeast taste with a nice strain that gives the beer a dryness that is very appealing. the spices and honey support the flavor as opposed to dominating the flavor. very enjoyable.

750 ml bottle. Hazy yellow body with a modest white head. Modest aroma, light yeast, spice/coriander, mild floral sweetness that could be honey, and you get the lemon zest or grapefruit smell. Flavor is spicy, dry muted pale malts and very mild yeast. Melange of spicy touches linger in the finish. Smooth average palate is lightly carbonated. Pleasant overall, is it a good Wit?? , yes. Would I spend my money on something else??... Yes. Would I buy again?.. maybe.

Draft, $4 @ Brixie’s. Hazy in the shaker pint I got, but brighter than the average cloudy wit. Smells nice and "clean," mild wheat malt with a bit of citrus, and hardly any spice. Taste is indeed light and wheaty, refreshing with those notes of citrus, though with the minimal description the beer menu had, I’d not have guessed grapefruit. I think my perception of wits is colored by the fact that first ones I had were "extreme" brewpub versions. Instead, this is a nice conversation starter that follows the style Mr. Celis revived.

Coriander aroma with babyfood banana undercurrents. Clear yellow, medium head, low retention, good lacing. Well balanced blend of coriander, malt, and bubblegum. Slight phenolic funk aftertaste. Quite nicely done, but I can’t help but feel that this could fall completely off if not fresh. Great, yet fragile.

Pours clear dark yellow with a frothy white head of average size. Broken lacing. Spicy, lemony fresh aroma. Fruity, citrus flavor, light spice, not overly sweet. Clean refreshing palate, that is spritzy and tart, not too sweet. Nice.

Bottled. Hazy yellow colour with mediumsized white fluffy/foamy head, that leaves mild lace. Aroma is wheat, some US hops, mild spices and some slight herbal notes. Flavour is quite identical, but also has some slight notes of yeast in it. A bit thin in the palate, but otherwise it’s rather refreshing and nice.

750ml bottle-pours a disappearing white head and hazy straw yellow color. Aroma is light malt/wheat, fruit, hint of spice. Taste is light malt, raw wheat tang, lemon tartness, coriander/pepper/some metallic. Thanks to PhxHrn for trade with Joe-jwc215 and me.
