Our first barrel aged beer here at Against the Grain is the Kentucky Ryed Chiquen. Named so because: 1. It was made in Kentucky. 2. It has a lot of Rye in it and was aged in rye barrels. and 3. It is not Chicken, and as we all know (or should know) Chiquen refers to anything that is not chicken. Brewed with Maris Otter, rye malt and caramel rye, imparting a spicy, fruity and dry flavor. Then hopped with enough English Nugget and Kent Goldings just to balance and fermented with our house ale yeast. After fermentation we moved the entire batch into the AtG private dining room and into used Redemption Rye barrels from our good friends at Strong’s Spirits. There it aged for 5 weeks until we felt it had picked up the right amount of residual bourbon character and oak flavors. We then transferred it to our serving tank, carbonated it and the end result is on tap now, a balanced drinkable and complex barrel aged beer.

Bottled. Hazy deep orangeish amber colour with a mediumsized off-white foamy head. Aroma is rye bread, some burnt sugar and mild toffeeish notes. Flavour is rye bread, some burnt sugar, dried fruits and mild toffeeish notes. Simplistic, but still tasty.

From a 750 ml bottle of unknown vintage purchased at Sergio’s in Lexington. Opened a gusher of extraordinary dimensions- losing a full 2/3 deposited as a foamy mess on the ceiling, counters and floors. Aromas were stale caramel. Flavors were a sour mess.

Mild whiskey, dried leaves, kibble aroma. Clear tea, thin tan head. Watered down whiskey, grass. Medium body, easy carbonation, somewhat waxy mouthfeel.

Shared bottle at Mi2 at Cardinal 11.02.19. Cloudy orange. Diminishing off-white head. Aroma and taste of berries, sawdust, oak, figs and citrus. Dry mouthfeel.

750ml bottle. Hazy, dark brown colour with average to huge, firm, frothy, moderately lasting, minimally lacing, off-white head. BA notes dominate the aroma, Bourbon and vanilla, caramel, underlying hints of toffee, some rye spiciness. Taste is slightly dry and toasty, caramel malty, hints of vanilla, Bourbon, slightly fruity, hoppy overtones with hints of pear and apple, corresponding parings; finish is again more dominated by BA flavours. Round, harmonious, homogeneous overall.

Tastes like jack daniels that someone spiked with ice and left to melt, watery mouthfeel doesn't reinforce the rye, malty nose. At least it's spiced well. Will let it warm up, maybe that's what it needs. Ah yes, don't drink this mad cold, warms up well.

Deep brown coloured body with a nice three to four centimetre tall light brown head with some light opacity in a lighter brown, but mostly clear. Aroma of alcohol, quite a bit of rye, grain and alcohol with a heavy dose of bitterness, smoke, toast, mushrooms and pure meat - very strong and quite pungent. Medium-bodied; Strong meaty flavour with some mushrooms, earth, grain, alcohol, funk and rye with quite a bit of meatiness and some sweetness from caramelised sugar near the end. Aftertaste shows the mushrooms and rye flavours with a bit of funk and some sugars with a bit of pears and apples and a dose of more meat - quite strong Overall, a nice and pungent beer with some odd flavours that generally work well but show a lot of funkiness and interesting qualities, but as long as you expect it - they work quite well. Nice to try and worth trying to find if you like meaty-beers with some off-centred flavours and things that don't quite fit into already existing styles. I sampled this 65 cL bottle purchased from Whole Foods in New York (Bowery), New York on 28-May-2016 for US$14,99 sampled at home on the Eastern Shore of Virginia in Pungoteague, Virginia while smoking a lot of meat on 25-January-2018 about a year and half after purchase.
