The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

Bottled 2006. dark yellow clear color, small white head. smells herbal, grassy, berry notes, light sweetness, elder flowers, lovely smell. medium body, soft carbonation. tastes earthy, grassy, bit flowery, elder flowers, citric, hay, wood, hints of some herbs, spices. finishes dry and lightly sour with notes of hay, elder flowers and some spicy notes. very very nice one, great balance, so smooth to drink, superb 9, 4, 9, 4, 18

Flaska drucken på Moeder Lambic Orginal, 2011 vintage. En riktigt snygg, torr, krispig och komplex Gueuze med medelstorsyra, en hel del funk och en fin fruktighet med äpplen, kvitten och aprikoser. Mycket mycket gott drucken i en miljö som gjorde den rättvisa.

Bottle at hawidere, 2013 vintage. Pours orange. Aroma is funky, fruits, vinegar. Flavor is sour, bitter, funk, mustiness, vinegar, dry, slight cognac like dryness and hint of grapes. Finish is sour and dry. Overall: very good

30.09.2018: 0,75l from bottle at Hawidere, Vienna. dark yellow hazy color, small white head. smells citric, grassy, earthy, spices, blue cheese, peppery, bit funky, some wood. decent smell, has a bit of a vin jaune quality to it. nice smell. medium body, soft carbonation, slick mouthfeel. tastes citric, earthy, spices, peppery, light funk, wood, bit vinegary. finishes dry and medium sour with notes of citrus, grass and spicy notes. decent but also expected a bit more. 8, 4, 8, 3, 16: 3.9

Bottled 27.04.2015. Amber hazy color, small white head. Smells grassy, earthy, cantillon Funk, peppery, spices, some oak. Very nice smell. Medium body, soft carbonation. Tastes citric, grassy, earthy, subtle funk, spices, peppery, light stone fruits, hay, tobacco. Finishes dry and lightly sour with notes of stone fruits, tobacco and grassy notes. Very nice one, very subtle balance, very good to drink
