The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

From tap at Muted Horn 10.05.26 after the IAEA conference in Jena. Cloudy golden straw colour. White head and lacing. Excellent aroma and taste of brett, acid cider and a hint of apricot. The apricot becomes more evident as the beer warms up. Acid and astringent aftertaste. Refreshing!

Vom Fass (2025) im Muted Horn Berlin 2026-05 getrunken. Auch dieser Jahrgang ist wieder echter Spaß im Glas. Die deutliche Aprikosen Noten strömen einfach großartig aus dem Glas. Die Säure ist present aber sehr gut balanciert und bleibt so eher im Hintergrund. Ein tolles Lambic mit wundervoller Harmonie!

Vom Fass im Muted Horn Berlin 2021-08 getrunken. Dieses gelbe Lambik hat ein wunderbares Aprikosen-Aroma. Am Gaumen ist Körper, Säure und Fruchtaromen perfekt abgestimmt. Tolles Bier!

On draft at 't Brugs Beertje Brugge. I mean its wonderful. Its just so wonderful. It makes me feel so happy. The flavour is pure apricot will a slightly sour beer behind it. Its not overly sour. Its beautifully balanced. Only minus is the aroma where there is a sour sweet thing. After that its stunning. Mouthfeel. Flavour. Finish. Amazing.

Monk's Cafe on draught: pours golden with white head. Aroma is great apricot notes, light basement, funky. Taste is pretty sweet, very fruity, moderately sour. Not as funky as expected. Glad this one was my first as it on the subtler side. Quite good.

Cloudy golden yellow with minimal head. Strong candied apricot, biscuit malt, vinegar, and hay aroma. Mildly sweet apricot, biscuit malt, mildly sour vinegar, and mildly bitter hay flavor. Good body. Flavor a bit subdued.

Draft at Zwanze. Aroma is hardcore apricot, some earthiness. Taste is highly sour (8/10) with delicious apricot flavor. Pours hazy golden with off white foam.

Aroma: a lot of fruit, very nice and prominent sweet apricot notes. Some funk.
Taste: along the same lines, fruity, nice carbonation, creamy, a bit dry.

Draft pour for Zwanze Day 2026, at The Sovereign in Washington DC. Poured a hazy golden yellow color with a fizzy white head. Aroma was apricots, tartness. Flavor was nice with mouth puckering tartness. Amazing, as always.
