The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

75cl bottle @ Belgian Beer Geeks Autumn Gathering 2025. Misty golden orange, foamy white head. An excellent lambic with a good wild expression, nicely balanced, but getting zero apricots unfortunately.. my quest for a real fou foune continues.

Bouteille 75cl à Belgian Summer Beer Gathering, merci Bart. Bottled 12/08/2021.
Dorée, léger voile, col assez épais et blanc – ce qui n’est pas mal pour ce genre de bière avec déjà qcq années en cave.
Arôme reste assez classique de Cantillon – vieux cellier, funk avec un bouquet abricot présent mais qui s’atténue déjà avec le temps.
Palais reste sur une belle base ‘funk’ auquel vient s’ajouter un côté finement aigre de la macération des abricots – la douceur originale d’un brassin frais s’estompe et laisse tout de même place à une teneur en bouche qui présente pas mal de notes aigres.

Bottle. Bottled 12 august 2025, 6%. Color: Slightly hazy orangish golden, white head. Aroma: Apricot, rural funk. Taste: Light to moderate tart apricot, apricot skin. Subtle rural funk. Light sweet and tart. Dry-ish mouthfeel. Some oak wood. Medium body, below average carbonation. Very well balanced, a lot of fruity apricot. Really nice one.

Huge, semi lastning white head. Opaque golden color.
Complex aroma with both apricot, lactic acidity and light brettanomyces.
A firm lactic acidity without bitterness.

25.10.2021: Taster at home courtesy of Sander, big thanks. orange murky color, small white head. smells heavy marzipan, apricot pits, soured joghurt, nice smell. medium body, soft carbonation. tastes of apricots, stone fruits, marzipan, joghurty, grassy. finishes lightly sour with notes of apricots, joghurt and grassy notes. had this two months ago at the brewery (kind of in unfermented state), where it was great, super almonds forward, now its good, but quite heavy on the joghurt, probably needs a month or two to clear up some.

0,75l bottle at home. Bottled 17. August 2021, 2021 cork. yellow hazy color, small white head. smells parfumy, stone fruits, apricots, jammy notes, . full body, lively carbonation. tastes citric, grassy, stone fruits, apricots, lactic sourness, volatile acids. finishes dry and rather sour with notes of citric, grassy and apricots. I like it, very refreshing in this heat, but very very sour, some funk would be great, unbalanced.

Loud pop from the cork. Sour and tart, fruity and dry. Still strong stone fruit, orange marmalade, drycwood and funk. Excellent.
