Et Tu Brut IPA is our first collaboration with long standing friends, Stillwater from NY Brooklyn. Known for their super contemporary styles, we couldn’t think of a better brewery to help us create what could be the next big thing! Exploding from San Francisco’s beer scene, comes this on-trend IPA. A Brut IPA is defined by bold characteristics including its: dryness, effervescence, and bright aromatic hop character that lacks the traditional bitterness of a West Coast IPA.
Using a super attenuator in the boil we have managed to create a low perceived bitterness, whilst retaining a solid tropical hop profile. By adding Ekuanot hops, we’ve created vinous notes giving a character resembling Brut Champagne. These features consolidate, resulting in a crisp and truly distinctive IPA - what else would you expect from a Stillwater and Wild Beer collaboration?
For the project the amazing design team at Stillwater created their take on our Wild Beer stags. For those who didn't know our logo is actually a merge of two stags clashing horns! We think it looks great!

On tap at Beaverex 2018. Pours hazed pale gold with a white head. Aroma: melon, white grape, citrus peel, pine. Taste: dry, light bitterness, tropical fruits, orange, lemon, grapefruit. Dry, light bitter finish. Medium bodied with soft carbonation.

On tap at Sir William's Pub, Ljubljana. Pours hazy golden yellow, topped with a creamy, offwhite coloured head, medium sized and ok lasting. Funky nose, mix of fruits and yoghurt, slightly bready. Milder bitterness, dry. Yoghurty feel. Lighter ody. A bit funny with that very noticeable yoghurt feel, but in a good way. Slight citrusy fruitiness in teh finish.

On tap at William's pub, Ljubljana. Shared with lovely Anja. Hazy golden, small off-white head. Diacetyl. Not in a good shape. Tart. Dry. Light. Flavour is better, but very little hoppy profile left. Alcohol hidden.

Keg at BD Castlegate. It pours golden with a dissipating white head. The aroma is oily, sweet, sticky, ripe white grape, honeydew melon, greengage and cake. The taste is firmly dry, limited bitterness, grassy, hay, straw, boozy kick is quite obvious, stewed pear, melon, peppery spice and a touch metallic with a drying finish. Medium body and prickly carbonation. Boozy feel. Lacks drinkability in my opinion. Fair.

Draft glass @ In De Wildeman. Orange, small white head. Nose is strangely bitter orange peel, medical pine resin. Taste is harsh bitter pine resin, something strange like mothballs or cardboard, dry as should be higher carbonation and very sweet thick lingering medicinal bitter profile, not a big fan of this bitterness profile.

Beaverfest. Keg. Almost clear pale gold beer, small white head. Light palate, semi dry, reasonable fine carbonation. Thin but sweestish malts. Banana esters. Little floral bitterness on the back end as is some mild citrc peel. A dull IPA.

Tap@Taphouse, Copenhagen (23092018) - hazy golden amber coloured pour with a white head. A medley of tropical citrus fruits with some grapefruit, lemon, tangerine, pale malty backing, medium body, hoppy light bitter drying finish.

[9/5/2018] Draught at Mother Kelly's Bethnal Green in London. Slightly hazy golden. Piney and fruity hops, a bit stale, dry, bitter.
