Barrel-fermented wild American farmhouse ale. Our La Maison American farmhouse ale was allowed an extended mixed culture barrel fermentation. Locally foraged Pawpaws were hand processed then added to the beer for refermentation. Wild yeast and bacteria from the fruit adds to the complexity of this elegant lightly sour beer. Notes of tropical fruit, tart citrus, and berries blend with honey, wine, and deep funk in this effervescent ale.

Pours hazy yellow with minimal head and has an aroma full of wild yeast. The flavor is really funky especially for a saison. Very tart. I like that. Not everyone will.

Aromas are vinegar fruit honey and perfume. Had a very fizzy short-lived head that is now gone no lace. I've never had a paw paw before and I think this is the wrong place for first timer. Flavors are dominated by the sour which is enhanced by the carbonation, are like Nose, and there is a little bit of sweet in the Finish.

Draft. Paw paw/banana, biscuit malt, and dry hay aroma. Cloudy pale yellow with small head. Moderately sweet paw paw, biscuit malt, moderately sour lactic acid, and moderately bitter hay/quinine flavor. Nice body and balance.
