Our series of New England barrel-aged saisons continues with Lineage Spelt, brewed with a hefty amount of raw spelt. Aromas of apricot, white grape and a lively acidity greet the senses. A palate of zesty lemon, kiwi, and a complex oak note are found in the finish. Light in body and crisp carbonation, Lineage Spelt is very refreshing.

750 ml. bottle sampled @ Trillium tasting. Golden non-lasting head. Nose is big aspirin, vinegar, acidic, puckering, lemon. Taste is vinegar, lemon, puckering, big aspirin, apricot. Body is acidic lemon & vinegar. Okay but very basic lemon / vinegar affair with a big weird stale aspirin vibe.

Bottle: Poured a yellow golden with white head. Aroma is sour tart with fruit. Taste is super tart fruit...pucker up butter cup.

Bottle. Pours a cloudy orange with medium frothy white head that lasts. The aroma is floral, lemon zest, oak, wheat. Thin body, tart lemon, oak, funk, acidic but balanced, enjoyed this.

Initially large, beige head slowly recedes to cover atop a bronze-amber body with light copper highlights and a good clarity.
Tell-tale acetic acid that marks this series provides plentiful cherry, light vinegar and other various red fruits, as cereal-like spelt in concert with the pilsner malt provides an enjoyable corn-meets-vanilla-meets-honey character that both balances and softens the bacterial acidity. Strong aromatics, fairly good complexity and funk/rustic charm linger with little/no alcohol or flaw.
In the mouth it's soft, malty and well-attenuated, though still displaying some chewiness to the texture thanks to the spelt. Acetic acid "sweetens" then sours things while the carbonation is mostly engaging though could be slightly more tight to really concentrate the texture. Light tropical fruits, plentiful cherry and mild lemon-lime-like Brett all find their way in to the beer and the finish is quite complex, flavorful and enjoyable. A touch of sharpness here and there, but pretty successful and a good candidate for more age.

Pours clear gold into a tulip. No head. Sharp lactic summer fruit aromas. Crisp with sharp underripe melon and hay upfront turning to lactic lemon/lime before the medium length oaked marshmallow finish.
