We’re big fans of experimentation here at AtG. We’re also big fans of Nachbar and, more importantly, James Gunnoe. We’ve made some stellar beers together, so when he asked us to do a collabo with Red Cabbage for What the Germantown Fest, we thought ‘Himmelherrgott! That sounds disgus-errr-delicious!’ And thusly, Kraut Bock was born. This beer defies tradition with a base recipe like that of a Kolsch, but stronger and fermented with our South German Lager Yeast. We took this ‘Kolsch-ish Bock’, added a dash of bittering hops, zested lemon and ginger, 50# of red cabbage. We had hoped the result would be a psychedelic fuscia mind-f*ck. Instead we got a gold-tinted pint with strange sweetness and notes of honey and melon, zesty ginger spiciness and a crisp lemony kick. It’s WEEEIRD in a good way. Just like all our favorite collabo babies.

Growler: Slightly hazy gold with a small white head. Aroma most definitely conveys the cabbage.....not at all unpleasant.....but a bit odd. Also grain and honey scents. Taste is lightly bitter cabbage, honey. Interesting.....not bad at all.

Draft. Cabbage, lemon, biscuit malt, and grass aroma. Golden yellow with small head. Lightly sweet lemon, cabbage, biscuit malt, and mildly bitter herbal grass flavor. Nice body. The red cabbage didn’t effect the color but it definitely makes its presence known in both the aroma and flavor - doesn’t really come off as the typical DMS brewing flaw though.
