Brewmaster Dan reveals the guarded secrets of Belgium Brewer’s in this Strong Ale. Ancient traditions dictate this Belgian style Dubbel was brewed with a long kettle boil, pitching a blend of yeast strains and bottle conditioning encouraged with Belgian Candi Sugar. Dan’s insistence on old world methodology creates the complexity of the Strong Ale you hold 18°P. Sipping will reveal a cordial of caramel and spiced fruit notes. This makes it perfect to lie down in your cellar or enjoy by the fire tonight.

Light ruby - moderate haze - cream, thick lace - nose of toffee, treacle, raisin, date, rye bread, all spice, cardamom - nice, full, creamy texture - full body - rich malt sweetness, tempered by moderate tartness and dry, earthy, dusty yeast character - flavors of date, dark.bread, nutmeg - peppery phenolics and moderate esters - finish is earthy (basement), with lingering spiciness, pepper, baked apples - excellent dubbel, almost as good as the anniversary ale.

12oz bottle. Rating #10...its official. Murky burgundy-amber body. Creamy off-white/beige head. At first I was disappointed with this beer, because it didn’t taste like your run of the mill Dubbel. It is lighter is some respects, leans into the amber malt a little. Spicy intense yeast tones. The more I sip at it though, I have to give it props. This has classic Belgian nuances, complexities. The luscious champagne mouthfeel is there. Like a Trappist interpretation of a Dubbel, going for greatness, not content to make a standard offering. Pretty solid beer.
