Abscission is a 100% spontaneously fermented beer with grapevines, fallen leaves, spicebush, juniper branches, laurel and sassafras steeped overnight in the coolship as the wort chilled. It was brewed in February, 2016 when our wonderful friends Marika Josephson and Aaron Kleidon of Scratch rounded up a “winter harvest” from their farm, drove it to Texas, and added it to our coolship. The result is a beer unlike anything we’ve ever tasted before that’s uniquely tied to time, place and people.

Abscission is the scientific term for the process of leaves being dropped from a tree, as well as for a state of cell division. It comes from the Latin for “to cut away”.

Draught@TCBW2018. Goldeny amber colour with a small head. Aroma is sour wood, some herbs, mild acidic notes with some zest and mild funk. Flavour is funk, some earthy and sour wooden tones with some zesty and lemongrassy notes to it.

On tap at Churchkey. Hazy gold, white head. Tart fruit, juniper, weeds, herbs, oak, white grapes. Interesting stuff.

Golden colour, white head. Spicy aroma, juniper, ginger, forrest, pine. Spicy, light sour flavour, tart, lots of spices, green notes. Spicy finish, juniper, forrest floor, green.

On tap at Arrogant Sour Festival 2018. Hazy orange, medium white head. Beautiful complex aroma, funk, some herbs, juniper, musty, fruit. Medium sourness. Very interesting, usually not a fan of herbal beers, but this one is quite good. Medium bodied.

Sampled draft @ TCBW 2018. Orange, little creamy white head. Nose is sour, funky with complimentary green mint. Acidic lemon, interesting medicinal funk, mint, juicy, very drinkable, very unique profile, very tasty. Wonderful.

Draft at TCBW 2018 courtesy of Juks, thanks! Hazy yellow color. Stonefruit and damp basement aroma. Taste is softly sour mixed fruits. Very tasty.

Tap at TCBW 2018, Tallinn. Color is slightly cloudy light orange with small white head. Aromas and flavors Fruits, musty yeasts, sourness and some berries. Dry woody sour.
