Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer.

The Project comprises five new ales, four in series and one specialty strong product.

The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt.

The barley malt makeup is exactly the same in each of the four and consists of three different malts.

The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively.

The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.”

Deep copper coloured body with a thin white head. Strong malt in the nose with a tiny bit of hops and nothing else. Light to medium bodied; decemt maltiness up front with some hops and a tiny bit of spice. After taste shows more of the malt and nothing of the complexity. Overall a pretty average beer good to try and recommended as a set. I sampled this 12 oz bottle at purchased at Merchants in Deerborn, MI on 28-May-206.

An unclear orange beer with a light orange head. The aroma is quite light, what is there is sweet with notes of both wheat and caramel. The flavor is sweet wheat, but also with light notes of grapefruit.

bottle - thin head, hazy appearance, mild nose of malt and citrus. I too thought this tasted more like a Hefeweizen than an American Wheat, probably due to the nicely balanced citrus flavors. The finish is slightly hoppy. This is a fine wheat beer and definitely worth trying.

This seemed a fairly straightforward wheat beer. Grainy and bready in aroma with a slight tang of orange citrus. The pour was a hazy golden with only a slight white head. Taste revealed the yeast and hints of banana and orange giving it a sweet undercurrent. There were also notes of grain and hay on top of the sweetness. A slight fizzy mouthfeel and moderate finish.

Thanks to CaptainCougar for this one! pours with a large, creamy, long lasting white head that forms over a hazy dark yellow body. Freah yeasty aroma that carries more than the average American Wheat, but not quite approaching the full bouquet one can expect from a fresh German Hefe. Citrusy and spicy. Sweet, smooth and rich bodied. Filling. Nicely done.

Cloudy orange in color, with lasting, sticky white lace - aroma of wheat (duh), oranges, lemon rind, honey - rather hearty for a wheat - tastes like marmalade spread on toast - some citrus and spice on the tail end - quite a wonderful wheat beer.

Thanks to Darkover for hooking me up. Golden-orange color with a compact off-white head. Thin, spotty lacing. The aroma is mildly fruity and malty. Light-bodied and fairly lively, with light yeast, wheat and malt flavors. The finish is smooth and has a hint of citrus with a sweet aftertaste. Pretty enjoyable overall.

Clear straw-colored brew with a fairly subtstantial frothy white head. Aroma is sweet and heavy of bread, grass and yeast. Maybe a touch of honey and some bananas. Flavor seems to pick up on the cloudy yeast, grain that is not present visually. Aftertaste is dominated by a grassy, banana flavor that is very different, but pleasant. Don’t know that I’d buy a case of it, but pretty good.

Bottle. Sweet peach-apple and wheat aroma. Orange yellow color with small head. Slight sweet peach and apple flavor with a mild hops finish. Good body. Less sweet and more hoppy than Oberon. Very nice for an American Wheat.

Bottled. Batch 7083. Sampled alongside the Wheat Four. Pours a big head in my hefe glass. More bubbles than the Four. Smell is a bit simpler, too: a light horseblanket under a touch of clove and trace of banana & citrus. Golden color with a blush of red like a good American ale. Very clear for a Bell’s, I had to look hard to see the finely distributed floaties. First taste impression is of an American version of a Weizen; slight bananas, but with a gummy yeast aftertaste. Carbonation is pretty low, leading to a watery mouthfeel. Distinguished in being a wheat beer that tastes nothing like the usual pale lager, but after that, um… undistinguished. Conditioning yeasty remains in the bottle. Well, I’ve got a sixpack, I’ll lager it in the fridge and try again.
