Brewed back in October 2017, in collaboration with beer writer Melissa Cole. This old style saison is brewed with spelt & rye in the grist, then re-fermented with De La Senne's house Brett Brux culture before bottling.

Bottiglia. All'olfatto si esprimono sentori di sour. L'intensità olfattiva è normale e l'esistenza olfattiva è sufficiente. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido appare opalescente. Il colore è giallo spento. Il corpo è pieno. L'amaro è nella media e c'è anche una componente moderatamente acidula. La forza gustativa è elevata e la persistenza è buona. Il finale è bruschino. Il retrogusto è intenso. Al gusto vengono donati toni di agrumi, frutta secca, limone, aromi dello scantinato, stantio e pipì di gatto.

Pours hazy yellow into a tulip. Bright white head with excellent retention recedes leaving scant sheets. Funky lemon aromas. Crisp with bandaid and aspirin upfront turning to earthy dry sourdough funk and brett in the medium length finish.

Paler gold, with some fairly active carbonation, and foamy white head. Nice Bretty bite, without being sour, soft grassy malt, that lingers to a rough, but light-handed, bitterness. Nice.

Bottle at home in Hackney - picked up at Beer Merchants Tap. Pours mostly clear gold with a fluffy, pure white head. Really nice stuff, quite dry, lots of funky brett character, some grassy bitterness, lemon rind, nips of pine needles. Light bodied with lively, massaging carbonation. Finishes with vague lemon and grapefruit, further dry and musty funk, grass. Fun one.

Alez fajne te bretty, ze az czesza berety. Kwaskowe tak wlasnie jak lubie, moze nieco w zapachu zbyt produktami farmakologicznymi pachnie to sa tez przyjemne odczucia cytrusow, oczywiscie tych najkwasniejszych, limonka i cytryna i pigwa wraz pigwowcem na czele. Piana tak jak niemal zawsze w tym browaze jest trwala niczym lodowisko w polnocnej skansynawii. Zlociste, nieco metniste. Pierwsza klasa.

0.33 l bottle from 'Hopfenrausch', bottled in November 2017. Almost clear, golden yellow with a medium large, foamy, stable, white head. Sweetish, fairly funky, gently fruity, floral and slightly grassy aroma of citrus peel, carambola, rotten grass and some pineapple. Rather dry, slightly bitter, a little sourish, quite funky, fruity-floral and slightly grassy taste of citrus peel, pineapple, gooseberry, rotten grass and carambola, followed by a short, moderately bitter, a little tart, dry, very funky and slightly grassy finish. Thin to medium body, quite effervescent mouthfeel, lively carbonation. Nice funky but also fruity Saison, great thirst-quencher.

Bottle from Etre Gourmet. Hazy yellow colour, lots of white foam. Fruity nose of peach, brett, yeast. Taste is grassy, dry along with some tart notes, brett. Very nice.

33cl bottle. A almost clear pale golden beer with a huge most good lasting white head. Aroma of brett, tart fruits, citrus hops, wheat and spices. Taste of citrusy hops, brett, funky, yeasty fruits, medium carbonation, interersting and good!
