Produced utilizing fresh honey without the addition of artificial flavorings, concentrates or artificial colorings. Even though greater production difficulties occur because pure, raw honey is used for fermentations, the intensity of flavor generated through this technique is worth the effort.
Exhibits a richness similar to a fine liqueur, this dessert-style beverage is not fortified, hence, it should be consumed shortly after purchase to enjoy its natural and rich honey flavor. Chaucer's Mead can be enjoyed in one of two ways, either chilled or heated with spices to create a delicious wintery drink.
The honey is produced in hives throughout Northern California and is composed of a blend of three types; orange, alfalfa and sage. Each of these components brings a unique quality to the blend and contributes to the overall complexity. Orange adds a pungent orange blossom flavor and has light color. Alfalfa is neutral in flavor but yields a dark, amber color. Sage, on the other hand, has a mild taste and a light color.

Bottle 750ml.ABV. 11.0%. Clear light to medium yellow color with virtually none head. Aroma is moderate to light heavy honey, sharp honey, grape ! moderate alcohol. Flavor is heavy sweet and light bitter with a long duration, grape - spicy, alcohol. Body is medium, texture is syrupy to watery and sticky, carbonation is flat, finish feel is moderate alcoholic. clear yellow, no head. very floral aroma, marcipan, fresh honey. flavor is like real good honey, a little sugary perhaps, but more or less plain honey, add a very faint floral citrussy touch, and some faint spices. alc. well hidden. palate is nice.

Bottle 75 cl. Courtesy of fiulijn. Pours a clear golden. Very complex aroma, marzipan and flowers - has an almost Chardonnayish zest. Medium body, sweet and very refined honey accents, again a touch of Chardonnay grapes, very, very flowery and sophisticated. Some alcohol heat in the finish, but generally very balanced. Yum. 070910

Bottled. A light golden mead. The aroma has notes of honey and citrus flowers. The flavor is very sweet with strong notes of honey, flowers, and spices, leading to a dry alcoholic finish.

75 cL bottle, courtesy of fiulijn. Pours clear and golden yellow with a fully gone head. Aroma is herbal and honey fruity. Mild sweet note. Dry honey herbal, slight chemical and honey. Sweet fruity into a spiced finish. Ends quite dry.

Blond color. The honey aroma is not very strong, and there is some alcohol, but also a nice touch of orange blossoms; delicate and seducing.
Very sweet, without being syrupy; it has a nice and complex honey flavor, with a very light touch of wild strawberries (smultron, Fragaria vesca) and new, delicate elements that I didn’t find in others, maybe it’s the sage honey.
Wrapping feelings; the alcohol is kept to the minimum.
This mead gets into me, and I get into it.

Appearance: Clear yellow with no head or lacing
Aroma: Honey, dry wine, grassy
Taste: Light honey and earthy, slightly dry finish that leaves a honey coating in your mouth
Very nice and smooth drinking.

Bottle from BevMo in Walnut Creek/Pleasant Hill, CA. Pours a clear, pale gold. Aromas of honey and maybe orange. Rather thin. Flavor is mild and clean. A little heat. Not a lot of flavor other than some honey and I think a little orange. Something herbal too, but very mild. On the other hand it seems to drink very well.

Very pale yellow colour. Honeyish nose hints at stickiness, light florals. Very sweet palate, soft and approachable, with basic honey flavours. The finish is still thick and sugary, despite a splash of alcohol.. Could stand to be a bit drier.

Bottle, atleast 4 years old. Crystal clear golden yellow body. Sweet honey and light vinuous aroma. Slightly buttery similar to chardonnay. Very sweet honey flavor, light buttery notes and faint fruitiness. Medium body with nice legs. With the spice packet: Somewhat cloudy body due to the spices. Allspice, clove and cinnamon aroma with honey in the background. Sweet honey flavor, light cloves and faint apple. Personally, I prefer the non-mulled version.
