Proprietor’s Bourbon County Stout is meant to show our immense gratitude to our neighbors here in Chicago – the loyal and adventurous fans whose support helped bring Bourbon County Stout to towering new heights. Each year this release will differ from the previous year; a special variant created for Chicago and unique to the year it was released. Whether your first sip is today or was from that first batch in 1992, thank you for lifting us up on your big shoulders and joining us every year to celebrate the original bourbon barrel aged stout.

2019 Proprietor’s Bourbon County Stout is an homage to some of the most beloved ingredients from Bourbon County variants of years past. Toasted pecans, coconut, cocoa, and vanilla mingle together to create flavors reminiscent of Tiramisu. Expect an aroma of dark chocolate, toasted coconut, and caramel to round out this decadent stout. We can't wait to share Proprietor’s with our most loyal fans in our hometown of Chicago.

BCBS from three years after the decision was made to pasteurize them in trying to avoid the infections they had in 2016 – interesting, since I only had Proprietor’s editions of this legendary beer from before that time. Shared by Martijn on Proevertjesdag. Mocha-beige, thin, open ring of foam on a jet black robe. Aroma of chocolate melting on a hot pancake, even a touch of melting Camembert cheese, pecan, cognac, cinnamon, amaretto, cocoa powder, black peppercorns, cappuccino, dry old coconut flakes, bayleaf. Dense onset, sweet with candied dates and raisins, slight umami accent, moderately carbonated with full, oily mouthfeel; a complex core of deeply chocolatey and toffeeish maltiness ensues, laced with a light nuttiness and a touch of coffee roastiness, but the latter in a soft, cappuccino-ish way without going all ‘pastry’. Lovely old furniture-like oakiness with further coconut and cinnamon accents add complexity in the finish, highlighted by warming, bourbon-like alcohol – perhaps just a tad astringent in the end, but altogether well-balanced. The pasteurisation did not necessarily bother me here – it does not come out so strong in a beer of this ilk anyway – but still I felt like it did not quite have the same level of complexity as the older Proprietor’s editions (even though the recipe changes yearly)…

Clear dark brown to black beer, no head. Aroma: lovely, good roast, chocolate, lots of cocoa powder, more roast, coconut, earthy, good deep roast, lovely smell! MF: ok carbon, medium body. Taste: nice, good roast, alcohol, chocolate, a bit oxidized, coconut, caramel, very nice, more chocolate, lovely stuff! Aftertaste: still quite some coconut, chocolate, cocoa powder, a little bitter, lovely!

Bottled Sep 27, 2019, drunk 2/4/24. Clear, dark, thin, tan head quickly to ring. A bit dense to start, fruity, lots of cacao. But the longer you let it sit, the more the bourbon emerges. Some strong prune and strong cacao. Not getting much of the other adjuncts. Not boozey, not too sweet. Stewed prune seems a bit more dominant than I'd like, with light, spicy vanilla, moderate cacao and not much coconut or pecan of which to speak. Rich, but not boozey. Spicy, with caramel, vanilla, dark fruit. Surprisingly easygoing, though with strong spicy bourbon and strong prune fruitiness.

Medium brown. The aroma is expressive, lots of pecan, vanilla and a great dark fruit character, with a fair bit of barrel. Medium body, the fruitiness lends complexity. Maple, vanilla, light pecan. Lots of depth and complexity to this. Excellent.

500mL bottle, pours black with a tiny head. Aroma is loaded with deep bourbon barrels, and well-integrated coconut, vanilla and gentle nuttiness. Flavour is rich and elegant, with plenty of bourbon, coconut and pecans in good cohesion. Oily, silky, rich and balanced. Beauty.

Bottle:Poured a pitch-black color stotu with a large dark brown foamy head with good retention and some lacing. Aroma of sweet fudge note with some bourbon and vanilla notes and coconut notes. Taste is also a well-balanced mix of coconut and vanilla with some sweet chocolate notes and bourbon with not much pecan notes actually discernible. Body is full with a nice oily texture and good carbonation with no alcohol perceptible. Solid pastry stout with nice bourbon notes.

500ml bottle. Smooth, sweet and heavy with pastry notes, vanilla, coconut, cocoa, toffee, nutty notes, chocolate and bourbon. Quite nice pastry version of BCBS.
