Pieter Maes brewed a ‘one of a kind’ dark and complex beer: the Brewmaster Selection Wild Quadrupel. This beer consists of 5 different specialty malts and one pealed and roasted barley in combination with the sour foeder beer. The acidity provides a high drinkability and a pleasant fruitiness, whilst the different types of malt give way to an abundance of complex and full flavours.

Thanks to Jef V. For this bottle. Nose of dried apricots,rum-plums, and a touch of red berries. Tart. Malty finish.

Bottle. Deep dark brown color. Shy maltaroma with hints of caramel and vegetable notes. Malty sweet, caramelly, soft bretty, alcoholic flavor. Roast. Friendly but somewhat lacking in character. The promised sourness is only noticeable in flashes.

Black colour, minimal head, pretty lacing. Aroma is cherry, cocoa, molasses. Lightly sour, not very pleasant. Soft carbonation. Good, but a bit disappointing.

Clear dark purplish brown beer, big solid creamy irregular beige head, stable, adhesive, leaving a nice lacing in the glass. Aroma: lots of dried fruits, some ripe to overripe banana, alcohol fusels, soft roast, some whisky. MF: ok carbon, medium to full body. Taste: lots of ripe banana, slightly sourish, quite some alcohol, soft acidity, dried fruits. Aftertaste: soft roast, some chocolate, dried fruits, alcohol, bit of banana, soft bitterness, nice acidity, bit malty, earthy, tobacco, very complex, nice beer, love it!

bottiglia 33 cl, bel cappello di schiuma cappuccino media grana persistente, color marrone intenso quasi nero, al naso malto tostato zucchero di canna vino porto cherry e leggerissimo caffè, in bocca è avvolgente malto tostato amarene caramello, carbonazione moderata, corpo strutturato, alcool ben bilanciato, acidula che compensa la buona struttura, amaro accentuato lungo nel finale. Non è proprio una Sour / Wild Ale ma rimane un'ottima birra, molto particolare, di qualità. c. Luppoli e Uva Varese 06.04.19

Gekocht op 10-12-2018 in de Delhaize te Dendermonde. En thuis geproefd op 16-2-2019. De Brewmaster’s selection Wild Quadrupel is een helder-zwart biertje met een rode gloed langs de randen. Bij het uitschenken krijg je een normale hoeveelheid donker beige schuim wat een gelijkmatige laag vormt in je glas. Het blijft sterk aan de glaswand kleven en is normaal stabiel; na een tijdje heb je nog steeds een fijn laagje in je glas. CO2 pareling is niet te zien wegens te zwart. Het aroma van Wild Quadrupel is karamel zoet, ook wat bruine suiker, wat vijg, chocolade- en karamel-mout en een sherry alcohol toets. De smaak is sterk karamel-zoet met ook nog de chocolade- en karamel-mout en ook iets van geroosterde mout en op het eind ook nog wat houtimpressies. In de mond geeft Wild Quadrupel een volle body met een olie tot siroop achtige textuur en een normale koolzuurprikkeling. Een complex biertje. In de nasmaak die lang uitvloeit zit een klein hopbittertje samen met het karamelzoete, de chocolade mout, een houttoets en weer een sherry alcohol toets. De alcohol laat zich hier na een tijdje wel gelden. Dit is zeker een lekkere zoete quadrupel die niet te opdringerig overkomt (lees: drinkt lekker weg). 3 February 2019. At Brugs Bierfestival. Cheers to Anke & Pieter! Hazy dark brown-black with a lasting, foamy, yellowish beige head; lots of lacing. Aroma of dried fig, plum, raisin, cookie dough, cinnamon, chocolate, toffee, brown rum, some wet cloth. Taste is medium to heavy fruity sweet, lots of raisin & plum mixed with toffee & chocolate, faint sour cherry in the back & a woody touch; light herbal bitterness offers some balance, a bit spicy & nutty, touch of cookie dough. Dryish, herbal hoppy finish, lingering fruit & toffee but actually more bittering towards the very end, woody again, with a good dash of warming liqueur alcohol. Medium body, creamy texture, soft carbonation. Mild sourness & wood work well here, but still very much a (young) Quad - with potential!

0.33 l bottle from 'Hopt', bottled in October 2017, cellared for a year. Clear, very dark ruby with a medium large, frothy, almost stable, beige head. Sweetish-malty, a little sourish, quite fruity aroma of caramel, raisins, figs and prunes. Quite sweet, a bit sourish, malty and gently fruity taste of caramel, raisins, figs, prunes and a touch of oak, followed by a medium long, moderately bitter, slightly tart, gently yeasty-spicy, a bit woodyand minimally boozy finish. Medium to full body, smooth, slightly creamy and gently effervescent mouthfeel, average carbonation. Interesting beer, the light sourness really adds to it, still not as deep as it could be.
