Our Hefeweizen was designed to emphasise the unique characteristics of this style without the extra carbonation that can make it difficult to serve. We use a lot of wheat malt: over 75% which makes for a long brew-day since wheat malt has no husk to aid the lautering process. We use a small amount of Spalt Select hops to not overwhelm the other unique flavours.

Keg at GBBF 25. Cloudy bright amber. Foamy white head. Aroma has the expected elements - citrus, banana, cloves. Flavourwise it's sweet with banofee thang. Sour citrus edge and a sprinkle of cloves. Light-medium bodied. Slick. Soft carbonation. Long dry slightly astringent finish. Dece Hefe, jefe.

Cask, third pint. @Nottingham Camra Beer Festival, Nottingham (England). 10/10/2024 [#7.850 Global - #44 Wales - #1 Geipel Brewing (My Welsh brewery #24)] Pours hazy yellow with a small white head. Aroma: plenty of clove, ripe banana puree and yeast. Taste: ripe banana and spiced malts. High acidity palate. Next one, please!

11/10/2024. KeyKeg at Nottingham Beer & Cider Festival 2024. Pours cloudy yellow gold with a small frothy white head. Aroma is banana, herb, wheaty, bubblegum, coriander. Medium sweetness, light bitterness. Medium body, quite smooth, average to soft carbonation.

Oh dear. DMS central. Lots of grains on aroma. Banana and clove but there's a lot of cooked cabbage and butterscotch which is doing it no favours. Not a good beer at all unfortunately.

Bottle from Stori. Appearance - hazy orange with attractive lacing. Nose - trademark bananas with an edge of pear drops. A little sweet spice too. Taste - loads of banana, some toffee and then more sweet spice, possibly nutmeg. Palate - light to medium bodied. Lovely creamy texture. Balanced tapering on the finish. Overall - really authentic Germanic brewiny here.
