The Flying Pig is a top-fermented blond beer with refermentation in the bottle. The 9% alcohol and the dry hopping technique makes this beer a real flavor bomb. Tripel by Wolf, formerly known as Lupus; dry-hopped and matured for a longer period of time than their other beers, launched in February of this year. Frothy, thickly cobweb-lacing, bit irregularly shaped, eggshell-white head, initially clear, pure 'metallic' golden blonde robe with fierce sparkling, turning misty with sediment. Aroma of ripe apricot, chewing gum, dusty old coriander seed, straw bales, dried camomile, gin, bread crumbs. Sweetish onset but not over the top, slight underlying sourishness, peach, banana and pineapple impressions, sharply stinging carbonation, rounded bready malt body with sharper grainy edges. Very outspoken old dusty-spicy coriander seed towards the finish, floral and hayish hoppiness, 'noble' and softly bittering, before a strong 'jenever'-ish, warming alcohol effect sets in. The alcohol is clearly noticeable here, too much so for me personally, but admittedly this is a tripel and it manages to avoid downright astringency, even if it does impair drinkability a bit. Other than that: feels like a very standard, old school tripel, an unnecessary addition to Wolf's already very classic range; why not experiment with New World hops if you are going to dry-hop your tripel anyway, for example?
