2500 flessen. Na een hergisting op fles van minstens drie maanden gebeurt het ‘champagniseren’ van het bier door het draaien van de flessen (remuage) en het ontgisten (dégorgement). Na het champagnisatieproces wordt de fles afgesloten met een kurk voorzien van een 40 gram houten plug gemaakt van de latten van eikenhouten vaten en doordrongen met 12 jaar oude Elijah Graig bourbon van de bekende Heaven Hill distillerie. Hiervoor werkte Patrick Theunissen samen met Oak Master in Spanje, gespecialiseerd in alternatieve kurken en met Tonnellerie Bossuet, een vooraanstaande artisanale tonnenmakerij in de Bordeaux streek. Met die speciale kurk bepaalt de klant zelf hoelang hij het bier verder laat rijpen en evolueren op de eik naar een nog rondere zachte smaak.

Hazy orange gold beer, good pale cream colour head. Airy soft palate, reasonably fine carbonation. Smooth malts, a light creamy sweetness. A light but strong woodiness, some bourbon fruity twang with a light vanilla oak foundation. Marmalade and mild hop spice. Touch of fizzy red wine on the finish. Nice. I get the light crispy brut nature but I also get the intended oaky bourbon vibe. Crisp, flavoursome and drinkable.

Vintage 2017. Drink in yesterdy to celebrate Mothers Day. Poured into two Deus glass and one in Crystalite Bohemia Champagne Glass. Jak wygląda, po pomine wygląd butelki, jest ladna, niesamowicie ciekawy korek, obok 3 monts jest to chyba najdziwniejsze zamkniecie butelki, Piana spora rosnie szybko i nie tylko pozostawia koronke ale oblepia całkowicie kazde szklo od srodka. Metnosc spora, początkowo słomkowo zoltawa barwa, pachnie normandzkim cydrem, sokiem ze swiezo wyciskanych jabłek i gruszek, jest bardzo owocowo i na końcu chmielnie i wytrawnie. Wytrawny posmak utrzymuje się długo. Dobre, zadziwiająco slicznie wygladajace, ale Malheur nadal nie pobity jeśli chodzi o piwa szampanskie

Thank you! 750 ml. bottle sampled. Now I have seen everything, underneath the cork there is a piece of wood attached to it, lodged inside the beer, actual oak in order to oak the beer, oh lord! Looks like a tiny plunger when you take it out. Small gusher. The oak was previously soaked in bourbon. BBF 01/05/2015. Near clear, creamy white. Nose is big sweet bourbon, candy strangely mixing with BE esters, soap, chemical,… Taste is massive vanilla hand soap, bourbon oak & bourbon are very heavy but sadlly the base is a poor BE esters, soap, almost green vegetable BE base,… The bourbon is good & heavy but the base is not really my thing.
