NL Midden september 2018 ontvingen we 500 kilogram wilde blauwe bosbessen, handgeplukt in de Zweedse bossen. Voor deze assemblage lieten we 250 kg gedurende 5 maanden en 5 dagen op 200 liter jonge traditionele 3 Fonteinen lambik macereren op een eikenhouten ton. Daarna werd de bessenlambik verder geassembleerd met jonge lambik en wat verse lambikwort voor verdere vergisting op fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd.
EN Mid September 2018, we received 500 kilos of wild blueberries, foraged in the Swedish forests. For this blend, we let 250 kilos macerate for 5 months and 5 days on 200 litres of young traditional 3 Fonteinen lambic and in an oak barrel. The berry lambic was then blended with young lambic and a bit of fresh lambic wort for a continued fermentation in the bottle. Natural fruit without addition of juices, sirops or sugars. Unfiltered and unpasteurised.

Don’t know what’s happening here. What’s with the ABV thing? I added the other and now I’m rating this? Whatever. Bottle, at Droom. Misty, pale purple. Fairly dense, lasting, pale pink head. Nose has full on blueberry. Some lactic twang. Clean oak. Some preserved lemon. Pinch of lemon brett. But basically, this is all about the fruit. Taste is super fruity, with light sweetness, and tart, fresh, tangy blueberry. Clean and fairly dry on the palate. Restrained acidity. Brisk, foamy carbonation. Tart, juicy fruit to finish. Very nice.

Bottled 25.02.2019. dark brown color, small off white head. smells funky, barnyard, light blueberry, spices, peppery, grassy. nice to very nice smell. full body, soft carbonation. tastes of berry notes, funky, wood, spices, peppery, horseradish, bit joghurty, earthy, grassy, light berry notes. finishes dry and lightly sour with notes blueberries, grassy and horseradish notes. 7, 4, 7, 3, 17

750 ml bottle, shared by Werckmeister, thanks! Dark red body, with a medium, fluffy, pink head. Aroma lots of blueberry, cherry, funk, some wood, some red apple. Tastes quite similar, with more horse blanket. Medium, slick mouthfeel, with a lively carbonation. Finishes quite dry, medium acidic, a bit sweet, with green apple, some funk, wood, some cherry, blueberry skin. Tasty. Really smooth, not too acidic, with lots of blueberry, while also with a cherry impression. Drinks pretty elegant, with some funk towards the finish. Lovely stuff. Score: 8 / 4 / 8 / 4 / 16

Bottled 25/02/2019. 750 ml. bottle. Fairly certain that I have had this one before, slow gusher sadly. Deepest berry colour & non-lasting berry head. Nose is dirtiest imaginable farmland blueberry, low lemon underneath and all stable and field. Incredibly dirty in best way possible blueberry, field, massive farmland & even more stable, lingering lemon & skin tannins, oak & old wine,… Lingering lemon, oak, lower skins, extreme in every way, so much fruit & so incredibly dirty, delicate in extremity.

75cl bottle @ Tilquin admin gathering, merci Pierre en pairing avec la version Tilquin.
Couleur acajou, col rosé fin.
Arôme au bouquet plaisant de baies mais restant un cran en dessous de la version Tilquin, nettement plus fruitée, ici un petit effet de fumé perdure, retrouve un côté funk-brett en rétro.
Palais est fruité assez moyen, le tout un peu fumé et grinçant aux dents, caractère poussiéreux, cave, pointe de cave voire de chimique, brett fermenté-funk citrique.
Au final, un côté lambic-jeune meerts qui ne donne pas un fini complexe à la hauteur du prix - en comparaison avec la version Tilquin qui ajoute du lambic 2 et 3 ans, on a vraiment un niveau plus élevé pour quasi 2x fois moins cher.

Flaska från SB. Tjusig mörk rödlila vätska med rosavit krona. Något subtil i doften inledningsvis. Murrig med blåbären långt ner i smakbilden. Mycket blåbärsskal och tanniner. Sträv i smak och munkänsla. Lakto-toner och blåbärsfil i utandningen. Tycker oftast blåbär kan gå åt två olika håll: antingen mycket fräschör med frisk bärighet uppe vid ytan, eller mer djup och murrighet. Föredrar det första. Men detta är gott det också, och det växer ju mer jag dricker.
