Bactéries lactiques dominantes au nez s’accompagnant d’un subtil fruité aux tons de poire ainsi que d’une base céréalière. Liquide doré tirant sur le paille et voilé. Mousse moyennement abondante et assez persistante. En bouche, les lactobacilles sont encore imposantes et s’accompagnent de légères notes de pommes et de poires. L’aspect vineux et légèrement vinaigré est également présent. La levure saison n’est presque pas perceptible si ce n’est que de légères notes de poivre. La base céréalière est perceptible mais très subtile. La corpulence est moyenne et la carbonatation moyennement douce. La finition est assez sèche. J’aurais apprécié plus d’éléments d’une saison. Les lactobacilles enterrent presque tout sur leur passage. Mais elle demeure quand même fort agréable. O:8.25 V:4.77 G:7.46 C:3.22 G:15.7 T:39.4

500ml (thx, Jonathan D.!) on Phill's deck. Appearance: hazy golden with a white head. Aroma: nice funk with barrel notes. Taste: along the same lines with nice fruity character, some ascorbic notes. Overall: good one.

500mL bottle, pours a hazy golden with a small white head. Aroma brings out rustic saison yeast and some complex wild notes. Flavour is quite wild, with lots of different bugs, with rustic saison yeast, and a touch of tartness. There's a touch of oak from the barrels. Nice wild yeast character. Excellent.

Cloudy, yellow. Fizzy head that dies out. Big white wine aroma with light brett. Soft body, lots of brett, some wood. And again a pretty huge white wine character.

At first pour, was mildly hazy, bright golden-yellow colour and the beautiful tiny-bubble carbonation was visible. At last pour, the beer is cloudy with orange hue and light particles floating around. The head is off-white warm, with some creaminess, long lasting and good lacing. The nose has some sourness reminding me of Brett, but not a yeast strain, but the lactic acid bacteria - which does not give out earthiness. Floral notes with mild citrus aromas. The taste gives out the sourness, but not too crazy, well-blending with the fruity malts. Hard to feel the Saison yeast in this one. The wine barrel does not give oak notes, but seems to blend well with the sour notes. Light tartiness on the tongue and a little dry. Very nicely brewed beer, if you do not expect your regular Saison.

Bottle: Poured a lightly hazy orangey color ale with a large foamy head with limited retention and some minor lacing. Aroma of acidic notes with light oak notes and funky ester is enticing. Taste is mostly dominated by acidic notes with some oak presence, light apricot notes with some subtle funky notes. Body is about average with good carbonation. I find this one too be too much acidic which hides some of the complex flavours.

Tap at Foudres Unis. Castor Saison rayée 6% Light cloudy gold in color with a minimal head and a tangy fruity aroma. The medium bodied beer is dry and acidic with tons of tartness. Good stuff. 3,7

Bottle thanks to YourI! Pours clear golden, large creamy white head, dissipates fairly quickly, good lacing. Aroma is brett, dust, lemon, hay. Flavor is light plus tart, light funky, brett, oak, lemon, clean, white wine notes. Light plus body, soft carbonation. Excellent.
