Detritivore was made by adding the same cherries that were used to make Montmorency vs. Balaton to fresh beer in stainless steel and allowing the combined beer and fruit to referment to dryness. This was the same technique that we originally used to make La Vie en Rose with the raspberries from Atrial Rubicite. As with La Vie en Rose, the second refermentation of the fruit results in subtler, more delicate flavors, as compared with the more intense flavors that result from the initial refermentation. Detritivore is also among the first Jester King beers to be brewed with aged hops that were matured for an extended period of time in a horse barn approximately 300 yards from the brewery. Aged hops are traditionally used in the production of authentic Belgian Lambic. The aging process preserves the antiseptic properties of the hops, which serve to fend off unfriendly microorganisms, while significantly reducing the bittering components. Detritivore is fermented using native yeast and bacteria from the Texas Hill Country, but is not spontaneously fermented, as our brewers actively introduce our house blend of saccharomyces, native wild yeast, and souring bacteria to the wort, rather than relying on inoculation by ambient, airborne microorganisms. The grist for Detritivore was composed of malted barely and malted wheat. It is 5.5% alcohol by volume, with a finishing gravity of 1.000 and is 3.4 pH at the time of bottling/canning.

Аромат весьма кислый сразу, есть персики и ананасы с сеном и почти уксусной кислотой, немного ягод. Цвет желтый, чуть темнее обычного. Вкус очень кислый, уже больше сена, хорошо ощущаются дикие нотки, снова кислота от персиком ананасов и ягод. Вроде все на месте, но нету особой глубины. А так в целом хорошо, может слегка переоценненно.

9/2/2024. Can shared by Colin, cheers. Pours cloudy golden orange with a small bubbly off-white head. Aroma is funky, tart cherry, straw, wood, musty apple. Moderate sweetness and moderate sourness. Medium body, spritzy carbonation. Nice citric sour finish. Enjoyable.

Can on the 1233 EUS-MAP, picked up from an online peddler, 26/01/24. Hazed orange with a reddish glint topped with a faded crimson cap. Nose is subtle cherry skins, tarte fruit esters, straw, funk, hedgerow. Taste comprises cherry skins, wood must, vinous tones, damp straw, funk, hay hake, dry rot, lemon peel. Medium bodied, fine carbonation, semi drying close with a light puckering edge. Tidy enough approachable sour.

Bottle: Poured a peach pink with a carbonated white head. Aroma cherries, funky, straw. Taste is funky, cherries, tartness, tangy.

Can from The Beer Cave. Hazy peach coloured body with an off-white head. Steady carbonation. Faint lacing. Aroma of peach and sour cherries. Flavour of lemon and underripe peach with a dry finish. Thin body with a slick texture. Light fizz. Delicate and delicious, a nicely judged beer.

Keg at the Beavertown Extravaganza, day two, 09/09/2017. A pinky peach coloured pour with no head. Aroma is cherry bakewell, plastic, cherry notes. Flavour is composed of tart dry grains, mixed cherries and berries, marzipan, cherry. Palate is tart, highish carbonation, uber dry.

On draft at Dominion Wine and Beer. Pours a hazy rose tinged copper with a thin off white head. Cherry aroma with some woody notes. Flavors are sour red cherries.

Bottle shared @ Dangerous Bottleshare 10th Anniversary thanks to Bursprak! Pours hazy light orange with a medium white head. Aromas of vinegar, cardamom, cinnamon, cherries, sour fruit, oak, vanilla. Taste is cherries, cardamom, cinnamon, vanilla, dry wood, light citrus, Pretty interesting but not really my style. At least not compared to Atrial Rubicite.
