A ’Pre-Industry Session Saison’, brewed with pilsen, rye, flaked wheat, flaked oats, spelt, coriander and grains of paradise. Fermented with a blend of Farmhouse yeast and Brettanomyces, dry hopped, and aged in Chardonnay barrels.

Location: 500 ml bottle from Whole Foods - Bowery, 12/11/15

Aroma: The aroma is fairly funky and yeasty, with a nice zest fruit / rind, and a bit of pepper
Appearance: Pours a slightly cloudy yellowish color with a somewhat fizzy white head
Flavor: Slightly less funky, fruity / rind type flavor, spice, and a nice bitterness on the close
Palate: Medium bodied, a little slicky, with a nice mouthfeel, and a tingly, rather dry / bretty finish
Overall Impression: This is a pretty good beer. I like the mix of flavors, and I like how the brett drys it out on the close. Really nice overall profile. Just a quality, well made beer.

375 mL bottle, wax covered, poured. Pours a dense yellowish, orange color with an active fizz head. Funky lemon aroma with some belgian yeast, and a little tropical fruit. Drinks a little dry throughout, white winish, and a nice balance with spice. Very nice tart up front. Very fun beer for me. Really enjoyed the beer throughout. Cool bottle too. I dig it.

Bottle. Pours a cloudy orange with no head. The aroma is rubber band, brett, funk, oak. Thin mouth, very tart, funk, wheat, brett, very good.

375ml bottle picked up at Supermarket Liquor in CO
Pours cloudy yellow with a small white head, some lacing. Aroma of oak, brett, coriander. Taste is wheat, tart citrus, woody, salty with a dry finish
I really like this, the mouthfeel is a little thin but a great tasting beer. But WTH is up with the wax job? Maybe it is marketing, because with these lined up on the shelves they are easy to pick out. The worst waxed bottles I’ve seen, and that includes New Glarus.

Hazy dull amber. Bubbly head. Aroma has a lot of c hop, a few bugs and lots of orange. Soft, fruity body, little bit of diacetyl giving this a bit of slickness and messing with the spicy/fruity dynamic. Ok, but lacks both focus and cleanliness.

Sample at GABF 10/11/2012, thanks to Bluemeow76 for assistance with note-taking. The beer pours a clear golden color with a medium thin and foamy white head and small patches of lacing. Aroma of yeast, malt and spice. Light body with flavors of sweet fruit, yeast and grainy malt. The finish is sweet and fruity. Decent overall.

Tap at Trinity - turbid gold - fluffy head - nose is medium dry, with spicy hops, moderate yeastiness and strong phenols, some of which are welcome (white pepper) and some not (light plastic) - flavor is very yeasty, lightly tart, almost hefe-like up front - but then some crispness arrives, some dry, Biscuity malt, moderate phenolic character - a little flawed, but overall relatively enjoyable.

Tap @ Tap n Handle Foco. Golden yellow appearance with a white head. A bit peppery/spicy, light citrusy, somewhat grassy aroma. Fairly dry, citrusy, somewhat peppery flavor. Pretty good, but I’ve had better Saisons from Trinity.
