Named after an iconic climb in Cochise Stronghold, Isle of You is a big, bold Double IPA that requires a bit of commitment. This is a big, bold IPA brewed with 2-row, medium crystal malts, flaked barley and a touch of black malt for a reddish hue. We hopped it in the kettle and fermenter with Simcoe, Bravo, and Centennial, to give it a fruity, citrusy hop character. It is relatively dry, and inviting for an 8.4% abv beer.

Pint can pours with a clear deep copper body that has thin gold hued edges and supports a thin light tan head of foam. The aroma offers up the expected crystal malt hit that has a spicy malt infused anise edge to it. The taste delivers smooth sweet malts, a thin ripe cherry ester note and then it slowly slides into a modest yet pleasing spicy almost black licorice like hop bitterness. This attains a nice balance and never gets too sweet or cloying. Solid.

On tap at Dragoon, pours a clear dark copper amber with a small off-white head. Aroma brings out lots of resinous hops and light toasted caramel. Flavour is robust, with loads of resinous hops and toasted caramel malt. Brilliant balance of resins and caramel. Excellent stuff.

Aroma: The nose is pine and resin, grapefruit, and some caramel
Appearance: It pours an unclear dark reddish, off-white head, heavy lace
Flavor: Flavor is nicely balanced, caramel and grapefruit sweetness, resiny hop bitterness
Palate: The body is medium, clean and easy drinking, with a soft carbonation
Overall Impression: Excellent beer. Sort of a Winter Yule Smith quality. I hope all AZ beers I try here are this good.
