A dry, spicy, and complex Belgian-style ale inspired by Trappists. Aroma and flavor marked by the marriage of peppery spice, citrus, and pear. Noble hops assertively utilized to create balance.

Pours slightly hazed gold into a tulip. Bright white head with good retention recedes leaving scant trailing sheets. Candi and funky yeast ester aromas. Sweet with bubblegum and pear upfront turning to peppery earth and meringue in the medium length finish.

Florals, coriander and some lime. Pours hazy yellow with ok head. A little boozy - finish is boozy sweet. Tap at Churchkey.

Canned 11/13/18, drunk 1/19/19.
Clear, blonde-bronze-golden with some warm-toned honey hues and a sizable, white head showing moderate retention.
Strongly fruity in the nose with apricot, pear and apple leading to light white pepper, tons of soft, sumptuous, honey-like base malts and low clove/no bubble gum or other messy esters. Lots of apple-pear and it's not green apple either. No alcohol or flaw. Relaxed and with no candy-like or syrupy notes.
Soft, malty, well-attenuated but still supple and fairly rich. Honey, pear, apricot and light marmalade-like acidity with spicy phenols, as well, for balance. Tight carbonation and no alcohol or flaw. A lovely tripel that stays away from the fiery alcohol and heavy phenolic character of many of its brethren.

On tap at Schilling Beer Co, pours a clear blonde with a small white head. Aroma brings out lots of candied sugar, with Belgian yeast esters and a sort of champagne-like effervescence. Flavour is unfortunately quite cloying, with lots of candied sugar, messy esters, and some alcohol. Inauthentic and way too sweet.

Draft at Schilling. Almost clear orange color, lasting head retention. Aroma is light peppery yeast, weak citrus and sugar. Really sweet finish some unfermented sugar bit not very distracting. The flavor is still nice, subtle fruit, with the peppery yeast right in the main body. The finish is nearly clean except for that sugar. Still overall, very easy to drink and not overly spiced or fruity.

hazy yellow 1 finger creamy head. Sourdough bread aroma, pepper and honey. peach, kiwi and a little bit of ginger taste. I like the yeast-forward taste with a hint of coriander and a wheat heavy body. Really tasty.
Updated Notes on April 4th, This is a 75CL Bottle-Conditioned version of Erastus. A little yeast from the sediment on the pour. For sure, the mouthfeel is insanely better than previous. Delicious bubbly mouthfeel. Less sweet than I remember but a very good improvement. Bumping Rating from 3.7 to 3.9

Good sized draft sample at the Granite State Brewfest yesterday. Sweet spicy earthy with hints of orange and alcohol. Nice tripel.
