Summers here in North Florida are hot and humid, not exactly the conditions that most ale yeasts prefer. This is why Swamp Head chose a yeast for this beer that likes it hot! This traditional ale yeast used in the Wallonia region of Belgium produces a complex seasonal ale known as Saison. They do their best work at temperatures above 80, while typical ale yeasts prefer temperatures in the 60’s. So we figured if we have to work in a sweltering swamp environment, why not brew a seasonal ale that enjoys Florida summers too! From the initial aromas of pepper and summer fruits to the lingering finish hinted of floral hops, Saison du Swamp is a bottle-conditioned ale sealed for any season.

Aroma of sour green apples and tropical fruit, maybe bananas and unripe mangoes. Flavor is soft bruised fruit, flowers and peppery spice. Very nice carbonation, fluffy pillowy bubbles, soft palate. I’m doing a disappearing act on this bottle. Cloudy pale yellow-gold color with a foaming thick 3 finger head.

750 mL bottle shared by GT2 at the 5/7/11 DC Ratebeer gathering. Bottle #522. Pours a hazy lemon yellow color with a large frothy white head. Decent head retention and lacing. Aroma of nutty and tart notes, honey, strawberry and other fruit notes and a yeasty finish. The taste is apricot, peach, berries, pear, honey and a tart finish. Medium bodied. Very nice beer.

750mL pours clear gold with white head. The aroma offers up lots of sweetness in the form of apples and pears along with a bit of spicy hops and spicy yeast and a touch of acidity. The taste is pretty much the same but adds some grainy malts into the finish. So so brew but considering the high price . . . well.
