This is a ruby-copper coloured ale with a lovely caramel aroma touched by a light cherry fragrance. Lightly effervescent, the first draught offers a wonderful caramel taste which will keep you begging for more! The taste of hops is quite discrete as it is overshadowed by the warm alcohol. This is one of our most popular and best tasting beers.

On tap at the Dieu du Ciel 14th anniversary party, pours a deep, dark amber brown with a small beige head. Aroma of scotch malt, sweet candied sugar and maple syrup. Flavour of semi-sweet maple syrup, corn syrup, some scotch malt and some candied sugar. ABV is quite well-concealed, though the alcohol certainly shows. Very good.

(hiver 2006-07)

On draught at the brewpub with MartinT, beerbuzzmontreal and his friend, 4/16/05. This was put on tap right before we were going to leave, making yours truly very happy. Pours a deep burgundy-amber color, with light tinges of auburn, somewhat clear and with a medium-sized beige head, some retention. Aroma of sweet toffee, sweet oranges and a touch of dry hops. Flavor outdoes the aroma, IMHO, giving forth plentiful caramel, butterscotch, light earthiness, a bit of musty/dusty yeast and some plums/cherries. Finishes, unfortunately, a bit too thin, with a little bit of papery astringency or perhaps spiciness. Complex notes in the background are very subtle and only tease the palate: vanilla, oak, peat, leather, raspberries. Very low carbonation, smooth, even mouthfeel, if somewhat watery on the end. Medium body.
