This was the first of the series to be created and used Kluyveromyces thermotolerans yeast. This yeast has the particularity of producing lactic acid during the primary fermentation, thus generating a sour ale without the use of lactic acid bacteria or other micro-organisms which could “pollute” the production plant.
It has a refined and elegant acidity to which passion fruit pulp was added to emphasize the acidity and achieve a beer with great character.

0.33 l can thanks to Lara and Jadran who brought it from Italy, shared with Višnja 666 and Jadran. Hazy orange, small off-white head. Light fruity flavour, passion fruit, some ripe fruit, some citrus, clementine, carrot. Very thin, spicy, fruity, tart, some spices or herbs, like dill. Light body but lasting finish.

lattina 33 cl, schiuma bianca fine evanescente, colore giallo arancio torbido, al naso intenso frutto della passione, in bocca frutto della passione e limone, corpo leggero, acidità media, carbonazione moderata, amaro percettibile. Secca asciutta nel finale. Molto aromatica e molto buona. c. Cantina della birra 14.03.21

On tap at La Torre osteria birreria, Mestre. Cloudy orange, small white head. Passion fruit, juicy, refreshing, medium sourness. Medium body and carbonation.

1/3 pint draft @ BrewDog Roma. Hazy lighter golden. Nose is weird sour acidic aspirin with some tropical fruit. Faint glue upfront but very low overall lovely tropical zest, mango fruit, passionfruit, very basic kettle sour but the fruit really pops, nice one.
