The Chimay Blue is a dark ale with a powerful aroma. Its complex flavor improves with passing time. The 75-centiliter version (since 1982) is called ''Grande Réserve'' because of its great storage potential., It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956. But after its great success, it was decided to offer it permanently.

Bottle, 330 ml at Kulminator. 11 years old at the time. Brown with beige head. Chocolate, dried fruit, moderate sweetness, bit more dull and unexciting than the fresh.

Vintage 2010. Cloudy deep amber brown colour, lots of tiny bubbles, good frothy light tan head, recedes after a while to a thin layer with yeast islets, light lacing. Very complex aroma, sweet malty, light acidulous, caramel, brown sugar, dark chocolate, raisins, dates, mocha coffee, yeast, spices (cinnamon, cloves), port wine. Taste medium to heavy sweet, light to medium bitter, caramel, brown sugar, maple syrup, spicy notes. Full-bodied, creamy texture, average carbonation, aftertaste mild bittersweet, bit roasty, dried dark fruits notes, alcohol. Overall a great beer a with a very rich and complex aroma and taste, surprisingly smooth and mild in the finish.
