Undated bottle drunk 1/28/23. Clear, pale, brassy. Hint of warm honey. Small, white, frothy head clinging to edge. Nose is a bit oxidized, or suggests it anyways. Honey, vanilla, hint of strong bread and maybe a pinch of acetic acid mixing with cherry-like brett and mild lactic acidity. Not as much of the saison character as you'd hope for. Clean, however, no alcohol noted. Somehow not oxidized in the flavor despite the nose suggesting it. Instead, mineral, yellow fruits and moderate lactic acidity with mild, tart brett and a crisp, saison yeast snappiness on the finish. Cherry and mild acetic acid with hints of oak suggest the lambic but it's certainly not overdone or dominant. Clean.

Thanks Tim M. Cheesy, light Lambic sourness, funk and fizz. Light sourness, bit of a spritz. Interesting mix. Lychee like?

Sexy little bottle. Pours out a golden topped with a white head. Nose is band aids funky barrel spice. Taste is more of the nice funky bugs barrel notes.

Dec. ’16. A 0.33 l bottle at Regina del Formaggio, Split. It poured a hazy golden body with a huge head. Fine, lemony, tart lambic and apricot aroma. Flavor was lightly sour and lightly sweet, showing some cider characteristics but on the other hand a typical lemony-chalky saison. That fruity sourness was balancing somewhere between green apple and lemon, with ton of chalk from yeast. Spiced up with cork and leather, this was quite complex beer although, as it’s a saison obviously, not very rich in flavors except dominating tartness. Thinner in body with moderately long finish which followed the flavor in leather and apple-lemon notes. Interesting blend I never thought about before, but it turned out excellent, ennobling base saison which is good anyway. Very refreshing and enjoyable summer beer.

Sampled 330 ml. bottle @ “Vini Birre Ribelli 2015”. Hazy citrus, only some white bubbles. Nose is rotting, milky, weird lactic, spoiled milk & spoiled grapes. Taste is rotting milky, bad lactic, sugar, corn, weird barn, pepper,… Milky body. No this isn’t right, not the good kind of wild for nor very lambiek-like. I have been told that vintages vary heavily in quality, enjoy-ability & taste. So I must have lucked out.
