This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash.
The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind.
"This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione.
Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.
Noble Rot first went on tap at our brewpub in February of 2011 and went into full 750ml bottle production in January 2012.

Bottle 750ml @ Dogfish Head Brewing & Eats, Rehoboth Beach, DE
Pours slightly hazy golden with a white head. Aroma has notes of malt, yeast, funk, white wine and citrus. Taste is light sweet, light bitter and light sour with a long dry, funky, white wine and citrus. Body is medium, texture is thin to oily, carbonation is soft.

Bottle, 22oz, at the brewpub. It pours a lightly hazy body, yellow in color and with no head. Some white bubbles though. It’s fruity on the nose, vinous and grape-ish, with some raisins. It’s full bodied, still sort of thin, with a low carbonation level. Citrus, grape, alcohol, green raisins and some sour, light funky notes. Lasting vinous finish. Quite lovely this one, more wine-ish than beer-ish, but still nice. 150621

Bottle 750ml. [ As Dogfish Head Noble Rot ].Clear medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, tart fruit, grapes. Flavor is moderate sweet and light acidic with a long duration, tart fruit, grapes, white wine. Body is medium, texture is oily to watery, carbonation is soft. [20150411]

Bottle @ Post-Easter Procrastination, Ulfborg. Pours clear straw with very small white head. Clear aroma of fruit, with some malty notes and touches of hops. Sweet-sourish flavour of fruit, esp. grapes, with bitter notes of hops. Sourish aftertaste.

Bottle @ fonefan tasting. Clear yellow with a white head. Aroma is sweet, malty, fruity, grapes and moderate hoppy. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish. 110415

750ml bottle shared at tasting. Pale, filtered yellow tan. Foamy white head, patchy. Creamy on the palate. Easy. Not unlike an Imperial Pils or big Lager. Grape tones come out the more you sip at it.....and I can’t really get into that. Tastes like wine, mead. An OK beverage, but not such a great beer.

750 ml bottle. Bright brassy gold color with a small bubbly white head. Fresh white grape nose has hints of hay, yeast and wheat. Tart dry sour malt flavor. More like semi-dry champagne with a bit less carbonation. Bitter peppery mid taste. Soft dry saison-like finish. Leave it to Dogfish Head to bring us this unique brew. Nice job.
