Hmmm. We wonder if anyone will buy a beer with the word "rot" in the name?

This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash.

The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind.

"This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione.

Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.

Noble Rot first went on tap at our brewpub in February of 2011 and went into full 750ml bottle production in January 2012.

Paid $11.89 for a 750 ml bottle at One Stop Market back in March 2013. Bottle to snifter shows me a bright clear gold color with fast dissipating white head. I also had this on draft back in Mar 13 but wanted it on a clean palate. A whole lot of waiting for no reason. Aroma has a white grapes, musty wheat and a touch of rotten wood.

Flavor of is almost that of a watered down white wine. Mostly all white grapes that reminds me of Riesling or a white table wine that is carbonated. Body is thin leaning on medium with average carbonation. The finish has sweet vinous notes linger on the end. Yeah, it’s ok if you want to try and get your wife or girlfriend drinking craft beer. I see this as another novelty beer from DFH. Very drinkable if you happen to love white wine.

bottle at Ft Wayne tasting Sep 14 2013 - The aroma of this brew is mainly grapes along with some Belgian style yeast. It’s a light straw color with a small, white fuzzy head. The flavor is very interesting. It’s lightly sweet, bubbly, and has tart grapes. There’s a dry character that carries into the finish. It’s very easy to drink. Quite good.

750 mL bottle from Whole Foods Market Charlottesville. Pours a slighty hazy yellow color with a medium sized foamy white head. Decent head retention. Aroma of pale doughy malts, grapes, apples, mild tannins. The taste is tart white grapes, scuppernongs, stone fruits, pale malts and a tiny bit of vanilla. Medium bodied, moderate carbonation, decent balance, lingering mild tartness.

A golden ale with a thick white head. In aroma, sweet fruity malt with grassy mineral notes, coriander, curacao, classic. In mouth, a nice champagne like offering, coriander and curacao, alcohol warmth, grape must, very nice. OttBottShare Oct 2013.

Bottle as shown. Pours a cloudy yellow with medium frothy white head that quickly diminishes to nothing. The aroma is floral hop, funk, and grape skin. Thin mouthfeel with a strong grape flavor and bready malt with wine flavor in the finish. Easy to drink hiding alcohol well, a very good fruit beer from Dogfish Head.

Bottle sample at a tasting at the Beer & Beyond shop. Thanks Yoav. Slightly hazy golden. Aroma is floral, slightly funky, with white wine fruitiness, sulphury notes, cidery hints and wood. Semi-dry flavor with vinous fruitiness, spicy notes, woody notes, apples and alcohol. Medium-bodied.

Tap at the Stagshead. Pours light yellow with some white head. Nose if of wine and hops. tastes of grapes, pears, light pepper and coriander, woody, ginger. Interesting and tasty enough didn’t know it was 9% well hidden

Smell of malt, maize, grain, coriander. Very pale golden colour, white head. Sour, slightly salty. Faint of sweetness due to strength. Aroma of white wine, apple, rubber, earth and leaves. Flat but plentiful carbon.

Dégustée en fût au "Prohibition Pig" à Waterbury, VT. De couleur dorée pâle et claire. Nez fruité (moût de raisins verts légèrement vineux, traces de cerises sûres et d’agrumes), léger de levures sauvages aux notes terreuses avec des notes de blé, d’épices et de grains de malt. Moyennement ronde en bouche avec un pétillement moyen ainsi qu’une texture aux notes huileuses. Goût légèrement sûr et acide de levures fruitées légèrement sauvages (moût de raisins verts vineux, traces de pommes vertes et d’agrumes) aux petites notes rustiques lors de l’entrée en bouche auquel se rajoute un goût de pain avec un léger goût de blé et de grains de malt pâle aux notes sucrées puis en finale l’on retrouve une légère amertume de houblon herbeux avec des notes d’alcool. Post-goût moyen-long et sec, composé d’un goût de levures fruitées légèrement sauvages aux notes acides et sûres (moût de raisins vineux, traces de pelures de pommes) avec des notes d’alcool, de houblon herbeux et d’alcool.
