Farmhouse Ale Brewed with Lemons & Limes – Dry, well-attenuated, farmhouse ale brewed with the zest and juice of lemons and limes.

We are pleased to introduce Jester King Provenance — a series of three farmhouse ales brewed with different combinations of winter citrus fruit. The first of the three batches was brewed with the zest and juice of grapefruits and oranges. The second batch incorporated the zest and juice of lemons and limes, and the third batch used the zest and juice of tangerines and clementines.

All three variations are dry, highly-attenuated, authentic farmhouse ales, brewed with Hill Country well water, malted barley, malted wheat, hops, and fermented with a unique blend of brewer’s yeast, native wild yeast, and native souring bacteria. Their flavors are yeast and souring bacteria driven with the fruits serving as integral components of the fermentation. We don’t add fruit (or fruit flavorings or concentrates for that matter) to filtered and pasteurized beer at packaging time to make what amounts to a beer cooler. Rather, we incorporate the fruit into the fermentation, so that wild yeast and souring bacteria can transform the fruit flavors into something that’s greater than the sum of the parts. For instance, think about the difference between grape juice and wine. Why are the two so different from one another? It’s because the grape juice has been fermented by living microorganisms. We apply the same principle to the use of fruit in our beer.

Draft at Jester King. Bright hazy yellow color. Wow, that aroma is big funky limes, lemon peel, and very mild lacto. The flavor isn’t going to throw you any curve balls, exactly as it smells with a bone try texture. Very refreshing in hot weather. Very nicely put together and the yeast IS well attenuated. Very nice

At WTWBA. Cloudy yellow. Nose is all lemon lime silliness. Tastes of lemon amd lime like a soda, some pepper, hay, minerals, and hooch. Touch too soda spritzy like for me. But tasty none the less

Bottle shared by Adam, thanks! Pours a hazy gold with a white head that dissipates to the edges. Aroma has a decent amount of tart lemon and lime with light funk, some light fruits and a light grain backbone. Flavor is citrus forward with lemon and lime tartness and just a touch of funk underlying.

#20 Jester King. 750 ml. bottle. Obtained in a trade with AdamJackson. Thanks. Bottled on 23/04/2014. Shared with Kraddel. Hazy golden with no head. Soapy nose with lots of lemon drop candy & similar lime flavoured candy, lightly tart; Taste is lot of lemon & lime drop candy, light pepper, straightforward but not overt sour, pepper & light anis in the back, malty, lingering sour. Substantial slick body. Pretty decent beer. Nice.

Bottle thnx to euhmgene. Pours unclear yellow small white head. Smell is lemon and lime, bit soapy. Peppery in a way. Taste is dry, sour, wood, some spices. Peppery aspect. Refreshing but perhaps a tad too dry. Aftertaste has a nice aromatic lime.

Sample at the 2014 Infected Chimipalooza on 11/01/2014. Hazy golden color with a medium thin white head that burns away steadily. Short strings of lacing. Aroma of citrus fruits and funky yeast. Medium-bodied with flavors of zesty lemon, herbal yeast and bready malt. The finish is tart with a citrusy aftertaste. As advertised, pretty good overall.

Aroma has a lot of lime character with some light lemon notes. A hint of coriander and grains of paradise. Light grain notes. A bit yeasty with a touch of poopy funk. Pours a hazy, pale, yellow gold with a thin white head that recedes to the edges where it lingers. Light lacing and faint legs. Flavor is fairly citrus forward with some light malt notes. The citrus adds a bit of acidity and cuts through the wheat. Light bitterness, rather refreshing. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty nice expression of the fruit, but not enough base beer notes.

750mL bottle, pours a cloudy yellow with a small white head. Aroma brings out serious lime zest, with a touch of brett and some faint drain cleaner. Flavour is along the same lines, with lime zest and chlorine. Not as bad as the Orange & Grapefuit, but still off the mark. Not good.
