Imperial Porter brewed with honey and aged in bourbon barrels

This was an exciting collaborative brew with our dear friends at To Øl Brewery based in Denmark. A rich and robust imperial porter served as the canvas for over 120 gallons local wildflower honey. After resting in bourbon barrels for over a year, this beer drinks like a sweet digestif with notes of honey, oak, baker’s chocolate, and bourbon barrel.

bottle dark brown, small light brown head. very nice aroma of bourbon, caramel, roasted malts, wood, coconut, chocolate. typical bourbon imp stout aroma. very well balanced although also somewhat boozy. flavor is very sweet with notes of honey and syrup on top of the chocolate and cocoa and licorice (lakridsdkonfekt) flavor, some roasted malts, quite a lot of bourbon. the honey moves the flavor almost towards mead or braggot, the honey is heavy in this one, the rest is having a hard time keeping up. Still quite good if you're okay with sweet.

Pours black, very gluggy, thin head. Big bourbon smell, some sweetness. Super soft and thick mouthfeel. Taste is awesomely rich. Quite sweet, plenty of honey and bourbon, and some light umami that works well with it. Some chocolate. Dangerously easy. Appearance: Very dark brown, near black. Small, tan head. Aroma: Lightly roasted, dark malt, some dark chocolate, slight barrel. Taste: Dark malt, lightly roasted, slight barrel, some sweetness. Warming. Very smooth. Bought: Craft Gallery, 375 ml, CHF 16.50 Info: 17/10-2020, BB: ??/??-????

Refrigerated 12.7 oz. brown 2017 bottle poured into a snifter. Black with beige head. Aroma is chocolate, medium body, medium/lower carbonation, and little lacing. Taste is chocolate, some bourbon, and a little honey.

Bottle at home. Pours black, nose is honey, toffee, caramel, vanilla, chocolate, taste is similar, very sweet, sticky honey, maybe some raisin.

Bottle shared. Pours black with a brownish head. Aromas of honey, vanilla, fudge, light roast, caramel. Taste has lots of honey, caramel, milk chocolate, vanilla, lightly oxidized barrel notes. Tastes more like a strong ale than a porter.

Bottled. Black with brief, tan head. Vanilla, coffee, figs, bourbon. A bit warming. On the sweeter side with loads of brown sugar, some molasses. Short, mildly warming finish.
