Bottle, looks like 6.4% written by hand on the label? Good fruity aroma, a little wood, a little funk, a little white wine grape. Sweetish and acidic vanilla notes. Hazy yellow colour. Small white head. The flavour is mildly acidic, lemon and vanilla. White wine barrel notes. Good woody acid. The mouthfeel is a little thin, but I guess ok for 5.4%. A little too thin if it is 6.4%. But a great beer anyway.

Bottle ?6.4%. Pours nearly clear pale yellow with airy but stable white head. Clear aroma of tart apples, Saison yeast and malt. Bitter, hoppy flavour with dry and funky Saison yeast notes, and mild malty touches. Salty and funky aftertaste with peppery notes. Decent work.

0,75l bottle at home. Vintage 2019. yellow hazy color, small white head. smells Brett, funky, oak, peppery, spices. Nice smell. full body, soft carbonation. tastes earthy, grassy, spices, brett, bit peppery. finishes lightly dry and lightly bitter with notes of peppery, Brett and earthy notes. Very good one, very good balance

Clear, peachy-apricot-golden with a large, white head that recedes steadily to a ring.
Lovey brett and white grape in the nose without too much tannin, no acetic and a moderate amount of lactic character. Fruity and playful with light earth/mineral/musty cellar behind it and no alcohol or flaw noted. Really like the interaction of the tart Brett with peach-apricot and white grape.
In the mouth it's tart, soft, malty and dry, being nicely attenuated. Tight carbonation and plentiful playful fruitiness (orange, apricot, lemon, lime). Good brett concentrations, more straightforward tart than funkiness. Super drinkable and well-executed all around.

750 ml bottle, bottled 31 Jan 19. Orange, moderate hazy body, with a big, fluffy, lacing, off-white head. Beautiful aroma of white wine, young cheese, Brett, wood, apricot, citrus, sweet grapes, subtle spices. Tastes quite similar, while a bit straighter, more citric. Medium, slick mouthfeel, with an average carbonation. Finishes smooth, moderate dry, wooden, citric, fruity, a bit funky, a bit spicy. Beautiful! Perfectly balanced, so smooth and fresh, while really complex at the same time. Especially the nose is amazing, with a lovely mix of fruits, Brett and barrel notes. I could drink this all day, a highlight by DLS! Score: 9 / 4 / 8 / 4 / 17

Medium, quite stable white head over finely carbonated hazy ochre-yellow beer. Nice Bretts AND vinous aroma, white fruit, even white wine/grapes, distant lunaria. Again vinous, fruity esters, acidic. Finish has something of white mushrooms, bit mouldy, and very complex. Light-tart, spritzy carbonation. Finish exhibits a little stickyness. Excellent, refreshing. Would do wonderfully as apéritif.

Je ne suis pas certain d'être le plus à même de noter cette Spruiting Vat, l'acidité n'étant pas mon fort. Et nous sommes ici sur une bière bien acide aux relents de brett. Les arômes que présente cette saison de garde sont néanmoins relativement intéressants et complexes sur le citron, le vin blanc, la groseille, le fût, le brett et bien entendu le vinaigre. Le visuel se porte sur un blond paille trouble avec une mousse blanche de 3 mm. On retrouve ces arômes de l'attaque au final sans réelles évolutions, mais sans que l'acidité ne tue les arômes toutefois. Bonne corpulence et longueur honnête pour un alcool modeste (5,4 %). Las amateurs d'acidité apprécieront.

Bottle at home. Bit hazy light yellow golden with bright white head. Lemon, wheat, Bretty, white grapes, grassy, lemon balm, light white pepper. It's fruity and spicy with a light cellar notes. Medium sweet and sour, under medium bitter. Medium bodied with creamy wheat feel and sparkly carbonation. Very tasty.

0.75cl bottle. Murky yellow, off-white foam. Dry ice cream lolly and white wine nose. Medium body, foamy sparkly Brett and desert base. Wood, tropical fruit, dry, lactic, light bubblegum, dry spicy finish.
