Every four or five winters, people in our region cut the branches from the tree trunks for firewood. As a result, knotted willows dot the landscape around our brewery.

On its classical Quadrupel base, we add an extra layer of ingredients to achieve the winter twist. No spices were added in the boiling stage. Instead, orange zest and vanilla pods were added after fermentation, in cold conditioning tanks, one week before bottling.

Malt: pils, munich, special b, chocolate. Hops: Goldings, Saaz. Other: vanilla pods, orange zest, dark candy sugar. Yeast: Belgian abbey.

30 April 2019. At Dirk's First Home-made Beer Tasting. Cheers to all! Pours hazy dark brown with a thin, unstable, frothy, beige head. Aroma of Pim's biscuit, orange peel, prune, raisin, licorice, pear syrup, milk chocolate, 'raw vanilla'. Taste is medium malty sweet, chocolatey, a bit creamy, lots of dried dark fruits (prune, raisin, fig, pear) with touches of licorice & subtle vanilla, bitter notes of coffee roast & green tea, supportive biscuity & caramelly character. Dryish, herbal hoppy finish, lingering licorice, dark fruits & some woody vanilla, with a nice dash of warming liqueur-like alcohol. Medium body, oily texture, soft carbonation. Nice Belgian quad with that little extra.

330ml bottle from Bierhalle Deconinck, drunk watching the Bros reunino documentary. Pours hazy dark brown, off-white head. Boozy vinous nose, orange, caramel, dark fruits. Taste continues along a similar path, smooth rich and boozy, strong orange, subtle vanilla, spicy moments. A bit clunky and imbalanced.

Bottle 330ml. @ Beer Merchants Tap, 99 Wallis Rd, Hackney Wick, Greater London, England E9 5LN. [ As Siphon Tronk ].Unclear dark brown colour with a average, frothy, good lacing, mostly lasting, off-white to beige head. Aroma is moderate to heavy malty, roasted, chocolate, candy sugar, dried fruit, banana, quadrupel yeast, candy - sweet yeast. Flavor is moderate to light heavy sweet and light moderate bitter with a long duration, burnt sugar - burnt malt, candy - belgium yeast, caramel, dried fruit, caramelized malt. Body is medium, texture is oily, carbonation is soft. [20180929] 7-3-6-3-14

On tap at the Christmas market very close to Brugs Beertje, Brugge, Belgium. A dark brown coloured pour with a medium beige head on top. Sweet, caramel, spice, dark fruit aroma. Tastes sweet, caramel, spice, dark fruit. A pleasant enough Belgian.

Keg at MK VHX, 20/11/18. Rich chestnut brown with a decent light beige covering. Nose is stewed fruits, dates, light vinous notes, booze fumes, toffee. Taste comprises fruit cake, alcohol, toffee, dried fruits, light spice, brown bread. Full bodied, fine carbonation, semi drying close with a rising boost. Passable quad if a little boozey without any real backbone.

[9/6/2018] Draught at Beer Merchants Tap in London. Dark brown. Caramel, dark fruits, orange, vanilla, very sweet, alcohol, kinda boozy. Not my thing.
