Every four or five winters, people in our region cut the branches from the tree trunks for firewood. As a result, knotted willows dot the landscape around our brewery.

On its classical Quadrupel base, we add an extra layer of ingredients to achieve the winter twist. No spices were added in the boiling stage. Instead, orange zest and vanilla pods were added after fermentation, in cold conditioning tanks, one week before bottling.

Malt: pils, munich, special b, chocolate. Hops: Goldings, Saaz. Other: vanilla pods, orange zest, dark candy sugar. Yeast: Belgian abbey.

7/IV/17 - 75cl bottle from Bierhalle Deconinck (Vichte) @ my parents' place - BB: n/a, bottled: 14/XI/16 (2017-436)

Clear dark brown beer, creamy dark beige solid head, little stable, adhesive, leaving a nice lacing in the glass. Aroma: caramel, soft roast, sweet, dried fruits, some ripe banana, bit yeasty. MF: lively carbon, medium to full body. Taste: soft roast up front, bit sourish, caramel, sweet touch, alcohol, banana. Aftertaste: lots of alcohol, warming the throat, pretty roasted, pretty bitter, dry finish, some orange peel maybe, could be the power of suggestion though, more alcohol, too much present. Not getting any vanilla...

At Kerstbierfestival 2016 , thnx for sharing everyone ! Pours nearly black, good white heas; Smell is bit roasty. Sweet. taste is sharp. Bit bitter. Coffee, very roasty. sharp, bitter maltyness. OK .

Dark red-brown to brown color, average sized beige to light brown head. Smell and taste lightly malts, diacetyl, butter, bitter. Off, totally off. Not good. (Although I had a cold when I tried it so it might be me...)

Small light-greige head over black beer. Liquorice, bit spicy, wood, sweetish roasted malts. Liquorice, drop, vanilla, orangepeel. Sweetness becomes more prominent warming up. Roasted and drier in the finish. Not Belgian in MF, missing backbone. Seriously missing body, certainly for its ABV. Feels much less strong than it is, this way. Sample might be a bit young, aging might well improve this.

[Thank you for sharing!][750 ml. bottle sampled @ O.B.E.R. Kerstbierfestival 2016] Black, tanned head. Nose is mocha, low chocolate with far too much gravy, overly umami. Taste is overly big on gravy, umami, herbal, grainy, low roast, cheap chocolate, lingering coal & umami finish, far too umami with some odd notes. Body is gravy, umami syrup. Didn’t get the vanilla & orange peel at all that were used here.

75 cl bottle. Pours pitch black with a small tan head. Aroma is roasted malty and slight fruity. Mild spiced. Roasted and dark malty. Breadish. Roasted and slight spiced.bitter and dry malty finish.
