The apple version in this series and only the third ‘real’ (traditionally made) apple lambic to my knowledge, after an experiment with Japanese apples by OWA and the new Malus Domesticus by De Cam. Snow white, mousy, medium thick, opening but – for unblended lambic – remarkably stable head, cloudy greenish yellow-hued straw blonde robe. Aroma of very strong green apple (acetaldehyde-like even), Granny Smith peel, dry cider, gypsum, pumice, dust, old hay, butter. Crisp onset, astringent hard green apple effect but in a ‘bright’, pale green, expressive and welcoming way, softish carb, dry wheat base, bit dusty with ongoing green apple (and increasingly dry cider) effect, juicy-dry and crisp finish. Quite elegant, the apple component has been very well integrated here; for me certainly among the best of these new Tilquin fruit lambics and one that should be ‘upgraded’ to a blended and bottled version.

07-12-19 // 125ml from tap shared with at Moeder Lambic Fontainas at the Tilquin Fruit Extravaganza Event #2. Very hazy yellow. White lacing. No apples in the nose. Wild yeasty dry funky body. Minimal subtle apple sulphuric in the end. I like.

Draft @ BxlBeerFest 2019. Dorée sur un léger trouble, col blanc. Arôme offre un bouquet léger fruité, pomme assez discrète mais offrant de fines effluves acerbes, le tout manque un peu d'ouverture au nez. Les lambics contribuent à un bouquet classique pour cette série - note fine funk/boisée, un léger nez citrique se fait présent. Palais est assez sec, acerbe et funk entre profile pomme, ici aussi plutôt discret, et l'assemblage de jeunes lambics qui confère un léger côté malté/boisé/funk. Les pommes apportent une touche acerbe moyenne avec un léger fini grinçant aux dents.

At BXL ‘19. Fairly hazy golden with a white head. Aroma of big cellar funk, cobwebs, citrus, apple and oak. Flavour is moderate sour. Medium bodied with soft carbonation.
