Omniscience & Proselytism holds a special place for us for a couple of reasons. First, we’re lucky to be down the road from one of the best strawberry-producing places in the country — Poteet, Texas. When we’re this close to fruit this good, our job is not to mess it up. Second, strawberry re-fermentation with barrel-aged wild beer can be notoriously finicky. Our simple, traditional re-fermentation technique just seems to work out well year over year. The uniqueness of the fruit, coupled with the success of our approach, makes this one pretty special for us.

Blend 7. 500mL bottle, pours a cloudy dark amber orange with a small white head. Aroma has a wonderfully bright strawberry character, oak, and wild yeast in good cohesion. Flavour is pleasantly acidic, with lots of wild yeast, dry oak, and bright strawberries. Nice incorporation of the strawberries, with the wild yeast nicely expressed. Excellent.

Great interesting aroma super funky Herbal grassy. Weird!

Taster showing pink tinged pale gold with sparse white foam. The nose shows moderately intense lightly tart notes of juicy strawberry. The palate is well carbonated and light bodied. Strawberry forward with a moderate tartness and moderate notes of tomato on the finish.

[5/10/2019] Draught sample at Mikkeller Beer Celebration Copenhagen 2019. Blue session. Cloudy orange. Funk, juicy fruitiness, oak, sour, smooth. Great and refreshing.

Tap at MBCC. Pours orange. Aroma and flavor are sour, fruity, berries, oak. Feels watery. Overall: good.

Fat på MBCC 2019, blå session. Mörk rosa-gul-orange med vit krona. Söt, funkig och jordig med toner av jordgubbssylt, jordkällare, fat, stall. Även en lätt blommig ton. Mycket gott!
