Hoppy Cedar-Aged Ale

El Cedro is brewed with Texas Hill Country well water, 100% organic malt (Two Row, Carapils and Wheat), Millenium, Cascade, Columbus and Citra hops, farmhouse and Brettanomyces yeasts, and Spanish Cedar spirals. After primary fermentation with farmhouse yeast, El Cedro is dry hopped with Citra hops and aged for weeks with Spanish Cedar spirals. It is unfiltered, unpasteurized and naturally carbonated through re-fermentation with Brettanomyces yeast.

Hazy and pale, medium Pale and slight haze. Medium head. Big cedar aroma, as advertised. Toasty aroma with lots of brett, good body, a touch of brett C but then the tannic assertive cedar takes over through the finish. Top quality.

From tap at BeerTemple, Amsterdam. Bone dry and nicely funky. Fruity as well with citrus, hoppy notes, grass, touch of pineapple and stone fruit. Medium body. Tart and mild sour with a moderate hoppy bitterness. Lovely.

Keg at Man in The Moon, Stockholm. Clear golden, small head. Woody tart funky nose. Tart with medium body and rounded mouthfeel. Cedar wood, lactic acd and mild funk. Low bitterness. Pleasant and laid back.

0.75l bottle. Hazy golden body with a huge white head. Aroma and taste of pine needles, sugar syrup, hay, lemon zest, lemon grass, soap, barnyard notes and sichuan pepper. It has a very nice hop bitterness to it. Very nice.

Opalescent golden colour, large, dense white head; aroma of very intensive piney, lemon zesty-lemongrassy, grassy, some soapy hay and sichuan peppery notes; taste is surprisingly hoppy-bittery with the same notes as cant be felt in the aroma; great one! Thanks so much for sharing, kapusil!

Batch #14 Sept 2022. 750 ml bottle. Pours a thick hazy amber with moderate head. Aromas of creamy muddled fruit tending towards mashed apricots, cottony brett, mashed stoned fruit, and toasted malts. Flavors follow same though brett effects are much sharper; plus there is an additional tartness. Cannot detect the cedar.

FHF 2024. Appearance: cloudy straw with a white head. Aroma: hoppy, a bit grainy, crispy. Taste: along the same lines, nice body, but it is really bitter. Overall: quite harsh, meh.

Tap.Hazy golden colour with small head.Aroma is spicy and fruity flavor of wood bit odd after taste of soap I just don't like.
